One of my favorite dishes I discovered in Hanoi, Vietnam! Bún chả is grilled pork (patties & belly) served with vermicelli noodles, fried spring rolls, and a whole bunch of herbs. Very tasty!

RECIPE – 4-Servings

Pork Patties
– 1lb Fatty Ground Pork
– 1 TBSP Minced Garlic
-1 TBSP Minced Shallot
– 1 TBSP Fish Sauce
– 1/2 TBSP Sugar
– Pinch of Salt & White Pepper
– 3 TBSP Fresh Mint Leaves – Chopped
Pork Belly
– 1lb Pork Belly – Thinly Sliced
– 1 TBSP Minced Garlic
-1 TBSP Minced Shallot
– 1 TBSP Fish Sauce
– 1/2 Brown Sugar
– Pinch of Salt & White Pepper
Fried Spring Roll Marinade
– 1/2 lb Fatty Ground Pork
– 1 TBSP Minced Garlic
-1 TBSP Minced Shallot
– 1 TBSP Fish Sauce
– 1 TBSP Sugar
– Pinch of Salt & White Pepper
– 2 TBSP Shredded Carrots
– 1/4 Cup Shredded Taro
– 3 TBSP Wood Ear Mushrooms – Minced
– 2 TBSP Glass Noodles
– 1 Egg
Pickled Vegetables
– 1 Carrot – chopped
– 1 Kohlrabi – chopped
– 3 TBSP White Vinegar
– 1 TBSP Sugar
– Pinch of Salt
Dipping Fish Sauce
– 1/2 Cup Sugar
– 1/4 Cup Fish Sauce
– 2.5 Cups Water
– 1/2 Lime Juice
Other Ingredients
– Vermicelli Rice Noodles
– Rice Paper
– Leafy Green Lettuce
– Mint
– Coriander
– Grill – Charcoal / Thaan
– I used Pok Pok Thaan. Very good smokey flavor without the nasty gas taste

Instructions
– Marinate all meats for at least 30 minutes
– ** Fried Spring Roll meat mixture needs to be as DRY AS POSSIBLE.
– ** squeeze out all the juices from the Taro, Carrots, Wood Ear Mushrooms
– Pickle vegetables for at least 30 minutes
– Make fish dipping sauce ahead of time. Heat until all sugar is melted
– Set up thaan – I used 4 bricks, 4 wax lighter cubes, and it took about 30 minutes for the thaan to get going.
– Place a fresh mint leaf on top of each patty prior to grilling
– Flip occasionally and grill until cooked & nicely charred
– Set up bowl with dipping sauce, pickled vegetables & meats
– Dip in noodles and herbs!
