Vietnamese Grilled Pork Recipe

Viet Grilled Pork

This was the same pork I used for the Southern Salad recipe. The marinade is a delicious blend of sweet and salty, and it’s super easy to make. If you’re pressed for time, simply grill or charbroil the pork, serve with a bed of rice and a simple salad.

We’ll usually marinate a few different proteins in advance, stick them in a Ziploc freezer bag and put them in the freezer for a few weeks. I think sliced pork butt works best. Tenderized pork chops are great, and shrimp is delicious as well.

Ingredients (serves 5):
* 2 lb pork shoulder or pork butt (Winco sells a nice 2-3 lb pack of pork carnitas meat. This works perfectly!)
* 4 TB minced shallots
* 3 TB minced garlic
* 1/2 cup sugar
* 2 TB fish sauce
* 4 tsp soy sauce
* 4 tsp black pepper
* 4TB avocado oil (veggie or canola is fine)
* Wood skewers

Seasoned Fish Sauce (optional) Ingredients:
* 3/4 cup water
* 1/4 cup sugar
* 4 limes (juiced)
* 2 garlic (minced)
* 2-6 thai chiles (minced or sliced)

Night before…
1. Slice pork into thin strips – 1/4” to 1/2” inch strips (that can later be threaded on skewers).
2. Mince shallots and garlic. Mix with sugar, fish sauce, soy sauce, black pepper and oil.
3. Marinate overnight.
4. If you’re marinating pork chops as well, tenderize first.

Make the seasoned fish sauce…
1. Mix all ingredients together and refrigerate overnight. You can either mince or slice up the thai chiles. I prefer mincing so you don’t bite into a chunk of pepper. Thai chile is very spicy!! 🔥🔥

Pickled Carrots/Daikon Ingredients:
* 1/2 cup julienned daikon
* 1/2 cup julienned carrots
* 1 TB kosher salt
* 1/2 cup hot water
* 5 TB sugar
* 1 cup water
* 4 TB vinegar

Pickle the daikon and carrots…
1. Julienne the daikon and carrots.
2. Toss with salt and let it sit for 15-20 minutes.
3. Prepare vinegar solution by dissolving sugar in hot water, add water and vinegar.
4. Layout a couple sheets of paper towel and put the daikon/carrot mixture on there. Squeeze all liquid out.
5. Place daikon, carrots and vinegar solution in a jar and let it pickle overnight.

Fried Scallions Ingredients:
* 1/2 cup sliced scallions
* 2 TB oil

The day of…
1. Soak wood skewers in cold water (prevents from burning).
2. Grill the meat. Grill skewers around 3-4 minutes per side (cover between flipping). Grill chops around 5-6 minutes per side (cover between flipping).
3. Fry the scallions over medium heat for about 5 minutes, stirring frequently. Sprinkle the fried scallions on top of the pork.
4. Add sriracha to taste to make spicier. Add sliced jalapeño for even more 🔥🔥.
