hi I’m Philip Alito and today I’m goingto make you my barbecued short ribsI have here some beef chuck short ribsto prepare I’ve already seasoned thesewith some salt and pepper before I startsearing those I’m going to make one ofmy simple barbecue sauces and the waywe’re going to do that is some ketchupabout 1 cup of ketchup and then I have1/2 cup of brown light brown sugar a anounce of red wine vinegar about an ounceof molasses and then we’re going to putin some liquid smoke not everyone usesliquid smoke for many years I didn’t useliquid smoke but we’re going to put alittle liquid smoke in here and then alittle salt this is a little combinationof some Himalayan salt and kosher saltand I’m going to add some peppercorns tothe mix and then I’m going to put thisaside this is ready to go stir this up alittle bit and we’re going to startheating this slowly ok so now we’regoing to we’ll get a set that aside justto start warming up and now I’m going tosear by my ribs my beef chuck short ribswant it nice and hot then barbecue sauceI made here is one of my simple onesit’s one of the favorite ones thatpeople tell me it’s a little smoky it’svery simple I don’t get into all of theherbs and spices that sometimes peopleuse I just keep it very simple so I’mgoing to sear these up I’m not going toput a little salt and pepper on thissideif you like cooking at home andespecially right now we’re in songbecause of color 19 you know you have tocome up with some new recipes yourfamily sometimes gets part of the oldones so you want to put my pan on here alittle bitand then therefore you seal these up alittle bit then we’re just going to putthose into the barbecue sauce and we’regonna cook those for about four hoursit’s under low heat to simmering to makethem nice and tender when you’re Syrianyou want to steer on a high heat just atouch of oil you don’t always need a lotI like to put a little bit some chefsdon’t like to use any or a little officethere is the fat content in the meatitself so you don’t necessarily have touse anywhere else but I like to use alittle bit of Cajun we depend fun whatI’m doing but I just want to get youknow a nice sear going all the wayaround hereand that’s basically it it’s a verysimple dish to make you go out and buysome short ribs now these servants foreight dollars a pound it was about twopounds here with the four pieces so itwas about seventeen dollars so for twopeople by itself you’re looking at abouteight dollars person plus whatevervegetables are start to make with it ofcourse so these are these are almostdone and that’s really yet it’s a verysimple meal to make it’s just watchingit for the three or four hours thatyou’re going to simmer itall right so that’s it I’m gonna putthese into my barbecue sauceand we’re gonna cook these up so let meput the peppercorns in and we should begood againbeef chuck short ribs barbecue saucevery simple method of making barbecuesauce with liquid smoke molasses redwine vinegar brown sugar and ketchupsalt and pepperkeep it simple the juices from the meatare going to become part of thatbarbecue sauce once it’s cooked you canreduce it a little bit more because it’sgoing to thin out because of the juicesfrom the meat and the fat from the meatyou want to skim off some of that fatbut basically this is it in about fourhours this is going to be some tenderand delicious meat now try it if they’rethe four hours it might take five sojust you know watch that you want it tobe tenderlet it cook let it get tenderize let itcook enough to become tenderizing andyou’ll have a wonderful dish again Jimla Polito locally to hospitalityconsultants I hope you enjoy this meal
