Mr. James E Baker created a very special BBQ sauce used for marinating and basting meat and as a table condiment for grilled chicken, pork and hamburgers. It is a multi-purpose BBQ sauce.

[Music]Thomas ready but we’re doing today todaywe are making daddy Baker’s barbecuesauce and whether that include thatincludes a base of 24 ounces of mustard24 ounces of ketchup to add to that ateaspoon of salt a teaspoon of blackpepper a teaspoon of cayenne pepper atablespoon and a half of sugar and 32ounces or one quart of apple cidervinegar one egg yolk and the juice of alives daddy always used lemon so it’sreally up to you what your preferencestoday I am using a lot and what you wantto do is have one spoon that’s unspottedto mix everything together once you getit going you need to use a flat slottedspoon to scrape the bottom you want tocontinue cooking this for thirty minutesand you have to keep scraping the bottombecause it’s going to thicken and ifyou’re not stirring it constantly it’sgonna stick to the bottom all rightlet’s start cooking I’m gonna start byusing 24 ounces of ketchup just dump itright into the stockpot and one thing mydad always did because you can seethere’s a little ketchup left in hereyou can add on top of this in the bottlesome of the vinegar that you’re going touse shake it up and then pour it back inthere and so that way you’ll make sureyou use all of that ketchup in the samething with them so now we’re going toadd the 24 ouncesto the ketchup do any kind of mustard orFrances’s daddy always classic mustardto the ketchup and again you can add thevinegar to the container shake it upinfinitely okay we’re gonna add theapple cider vinegar to the ketchupbottle just a little you know you canpop back on you’re gonna shake it up getit all mixed upso you’re getting all that ketchup intothe potsand now you can repeat that processagain now we’re going to add the applecider vinegars to the mustard containerso we can shake that up yep every bit ofmustard out of here we’re not wastinganything[Music]and add that to the place we’re actuallygoing to continue adding the apple cidervinegar the rest of this and to thiswe’re going to add the 1 teaspoon ofsalt ISA 1 teaspoon of black pepper oneteaspoon of cayenne pepper and atablespoon and a half of the sugar andhe’s Yocum one[Music]then we’re gonna do the juice of onelime together I said daddy always usethe lemon juice that right in there nowI’m gonna put the heat onwe’re gonna go medium hoppy then juststart stirring it all together and againonce you get the heat going it’s gonnabe about 30 minutes just to let itthicken upokay the cooking process has concludedas you can see it’s thickened up overthat 30 minutes period of cooking I’mgonna let it sit here and cool once it’scooled I’ll transfer it to a suitablecontainer to a refrigerator[Music]looks good[Applause]
