Hello everyone. Here is the ingredients for my Spanish Inspired Dinner
Pastelón Ingredients:
4 ripe plantains
1/2 cup Coconut/ Vegetable oil
2 pound ground Turkey/beef
1 teaspoon Garam Masala (optional, I love the flavours of it)
1 Teaspoon Salt
1 small white onion, minced ( 1 cup)
1 Red bell pepper, minced (about 1 cup)
2 tablespoons chopped cilantro
1/2 Cup green olives, sliced
1/3 Cup Tomato Paste
1 teaspoon Ginger Powder
1 tomato ,minced(about half a cup)
2 cups cheddar, or mozzarella cheese
2 large eggs
1/2 teaspoon baking soda
1/2 cup heavy cream
1/2 cup milk
Preheat the oven to 350°F. Lightly grease a 9×12 casserole dish with cooking spray or butter.
Spanish Rice
2 Tablespoons oil
2 tablespoon chopped onion
1 1/2cup uncooked rice(washed)
2 cups vegetable broth
1 cup salsa
Method:
Heat oil in a pot, over medium heat. Stir in onion, and cook until golden brown for about 5 minutes, Mix rice into pot , stirring often. When rice begins to toast stir in salsa then vegetable broth. Reduce heat, cover and simmer for 20 minutes, until liquid has been absorbed.
put foil paper on top to let the steam fully cook and fluff up.
BBQ Chicken(seasoned for 4 hours)
4 Chicken Leg(washed with lemon/vinegar)
Seasoned with herbs of choice
1/2 cup onions
1/3 tablespoon scotch bonnet pepper
1/4 tablespoon salt
1/4 tablespoon pepper
1/3 cup Culantro(Chadon Beni)
1/2 cup of your favourite BBQ sauce
1/3 cup ketchup
Step 1;
Preheat oven (350°F). Place Chicken in a baking dish.
Cover with aluminum foil and bake for 30 minutes.
Step 2;
Whisk , ketchup, BBQ sauce, green seasoning mix together in a bowl; remove chicken from oven and pour mixture over chicken.
step 3;
Remove foil and Place back in the oven for an additional 30 minutes Bake in preheated oven until no longer pink at the bone. Turn chicken to bake on the other side
