Oven roasted turkey thigh recipes | Slow cook turkey thighs

INGREDIENTS: Oven roasted turkey thigh recipes
-Turkey Thigh Joint
-Vegetables (you can choose your favourite): new potatoes, sweet potatoes, carrots, butternut squash, yellow and red peppers, onions
-100g butter
-Juice of 1 lemon
-Lemon zest
-Chopped fresh parsley
-2 tsp salt
-2 tsp black pepper
-3tbs olive oil
-2 tsp italian herbs
-2 tsp spicy smoked paprika
-1 tsp black pepper
-2 tsp salt

PROCESS: Slow cook turkey thighs
1. Combine softened butter, olive oil, parsley, lemon zest and lemon juice.
2. Place turkey into the baking tray. Make 2 balls from the butter and rub it under the turkey skin, apply the rest of the butter mix all over top and bottom of turkey. Cover turkey with foil
3.Pre-heat oven to 220 degrees, add turkey and roast for 1 hr;
4. Add all veg into bowl, season as per above and mix well
5. After one hour, take turkey out. Add vegetables into the baking tray, place turkey thigh on top of vegetables
6. Set oven to 180 degrees and roast turkey with vegetables for 45 mins
7. After 45 minutes, remove turkey from baking tray and let it rest for 15-20 mins, meantime if vegetables need more time in the oven, you can put it back;
8. Then its time to carve the fragrant and super juicy turkey!
