happy Mother’s Day everyone today we’reusing all the joy spices and seasoningsin our pantry to make this delicious andtender rack of ribs next we’ll takecheap cabbage carrots and applesscallion bell pepper red onions andwe’ll create a creamy and crunchycoleslaw that’s far more tasty than anyyou’ve tried before if you have cornmealflour sugar butter and eggs you can beeating a delicious cornbread in minutesfirst we’ll measure out the spices andI’ll leave the link to all these recipesin the description box below[Music][Music]it better come two teaspoons 2tablespoon depending on how spicy rightand then one teaspoon of celery seedsmaybe a teaspoon and a half[Music]teaspoons of celery seed how soft was itabout tails for assault[Music]Lexx will grind about a tablespoon ofallspice berries in the spice grinderand this is optional spice quarter cupof paprika 1 tablespoon oregano 1tablespoon of garlic powder 2 teaspoonsof onion powder 2 teaspoons of cumin 1and 1/2 teaspoons of mustard powder 8tablespoons of brown sugar 1 tablespoonof salt 1 tablespoon of black pepper 1tablespoon of cayenne pepper and 1 and1/2 teaspoons of celery salt now let’smix it well to combine all the deliciousflavors and spices this can be madeahead of time and saved in a ziploc bagor a jar with a secure untight lid nextwe will clean up our workspace and getready to prep our ribsnext we’ll add a generous amount ofvinegar to a large bowl of water formore tender Fall Apart ribs you need toremove the thin membrane covering therack sometimes it comes off easily andsometimes not if it’s slippery you canhold it for the paper towel or a kitchentowel once you get a good grip just pullit down once in a smooth motion you willplace it in the vinegar water and wewill soak it for about 20 to 30 minutesjust make sure it’s fully immersed inthe water after 30 minutes we will giveit a good rub massage to remove anyadditional slime unitsanother rinse or two and then we’ll Patit dry with paper towelnow we’ll generously season both sideswith the spice rub that we madeI usually rub about four tablespoons ofthe spice rub on the top and twotablespoons on the other side this willensure that it has full flavor in everybunt if you don’t eat pork or ribs orpork ribs you can use this spice rub ona whole chicken here’s my secret tomoist juicy tender ribs I slice half anapple over the ribs and then I pour onabout a half cup of apple juice or appleciderit keeps the meat moist and prevents itfrom drying out we will wrap the ribsinto a nice packet and you can marinateit for a couple of days or up to a weekin the frigerator you don’t have timetoday so I’m going to put it on thegrill right awayrepeat for the second rocket ribs andget your smoker or grill ready let’sclean and sanitize our work I’m having a lot offun watching him try to figure it out[Music][Applause]well that turned out to be the wrongblade so we’re moving on to plan B we’regoing to pulse it for two or three timesusing the chopper feature for the carrotuse a small shredder keep the carrotvertical and do not use your fingeryou[Music]exfilled dice the peppers the onion andchop these County[Music]an apple is totally optional but I dolove the crunchiness and the sweetnessit adds to the coleslaw[Music]and that’s it the prep work is done nowwe’ll make the dressing to the Mayoadd brown sugar and lemon juice and youcan use any type of mayo olive oil mayoor Vega nice whatever you wishgive it a stir and add it to yourchopped ingredients after all that dramanow let’s mix you can use two woodenspoons or the more effective tool or themost effective tool in the kitchen isyour hands so that’s what I’m gonna use[Music]taste and add salt of required and alsoadd a little dash of celery salt if youdon’t have it don’t use it but it’s oneof the traditional ingredients use in acold school just a little more cleaningbefore the grill is ready and there itis the grill is ready let’s head onoutside into the yard it’s a cold andrainy day but nothing stops us frommaking some delicious ribs place theribs on the smoker or the grill or inthe oven at 350 degrees Fahrenheit andallow it to cook for one to two hours ittook about an hour and 20 minutes on mysmoker now is a good time to pull up thecornbread recipe from cooking with reihadot-com first we’ll melt the butter in acast-iron pan to be used a little lateron in the recipe and this recipe is alittle different from the one I have onmy website but the very same ingredientsare used you’ll need buttermilk for thisrecipe but if you don’t have no worriesadd 1 tablespoon of vinegar to a bowlthen add 1 cup of milk and let it sitfor 5 minutes now add 2 eggs to thebuttermilkwhisk until well blendednext we’ll measure out the cornmeal andI do love a coarse cornmeal as opposedto a fine-grained cornmeal it’s what amuch better texture in my opinion nextwe’ll add two cool melted butter to themixture and we’ll whisk until combinedand then we’ll add the brown sugar andthe white sugar and continue to whisk itthe flour and salt goes in next andwe’ll whisk it again mix I’ll add a halfteaspoon of baking soda because I forgotto add it to the bottom milk and thenwe’ll pour the batter into a very hotcast-iron pan and we want the pan to behot to develop those crunchy crustyedges we all love so much place it inyour preheated oven and cook for 30 to35 minutes I had no plans to make friedrice so I’m looking in the freezer forinspirations a one-pound package ofmixed veggies we’ll say today I alsofound some scallions celery and onion inthe frigerator so that’s going into therice as wellthe cornbread is done when the top isfirm and it’s a lovely golden colorthere is no parsley today but I’ll usecilantro it’s a great substitute alsofinely chopped a couple of cloves ofgarlic and hot pepper spicylet’s fry the rice when the oil is hotI’ll add all the top verbs the oniongarlic and hot pepper and give it a goodstir cook it for a minute or two andthen we’ll add the mixed veggies you’llcook this for two to three minutes andthen we’ll add the riceas I said in my last video it’s notnecessary to use day-old riceat this point I’ll add salt and freshlyground black pepperthis is a 5-minute right his lady ishungrythis is so not the ricemakes will add dark soy sauce and youcan add as much or as little as you likenext you’ll add sesame oil a couple oftablespoonsthe cornbread is making me so hungrymaybe should we put a little morelet’s taste the salttake it off the heatquick thus far as food MacLeannow let’s finish up the ribs we’llremove it from the racking and place itdirectly on the grill to achieve colorand more flavor[Music]you’ll cook it for 15 minutes on thisside and then flip itwell the ribs are finishing up we’llmake a quick barbecue sauce we’ll startwith one cup of ketchup and then we’lladd a couple of tablespoons of honey ingoes 1 tablespoon of green season forCaribbean flavor a couple moretablespoons of honey and then we’ll addsome chili garlic sauce you can add acouple of tablespoons according to yourpreference they’ll finish up with onetablespoon of molasses to give it colorand a rich earthy tastegive it a taste stir and let it simmerfor a couple of minutesnow we’ll baste without deliciousbarbecue sauce you made and if youdidn’t make barbecue sauce you can useany store-bought sauceand that’s it for today my
