I ran the Egg at 250ºF, cooking the rack bone-down without wrapping. It took 5 hours until the ribs were “probe-tender.” Smoked beef ribs are a favorite in my household and these delivered. I haven’t cooked on the BGE for a few years, and this cook has inspired me to use it a lot more.
