Derek Allan’s BBQ Wagyu Beef Ribs smoked on the Blaze Kamado Grill

First time cooking Wagyu Beef Ribs that I won from Derek Allan’s BBQ giveaway. I smoked these beef ribs on my Blaze Kamado Grill with Prime 6 Charcoal and Post Oak Chunks.

1. Trimmed a small part of the ribs
2. Used Worcestershire as a Binder then seasoned with granulated salt, and bourbn smoked black pepper and alllowed to rest while I started the Blaze
3. Placed Prime 6 Charcoal along with chunks of post oak at bottom of the Blaze Kamado
4. Used charcoal chimney to get the charcoal going before placing overtop the unlit charcoal/wood
5. Placed half plate over top the fire along with aluminum pan on top filled with mostly water but also included black cherry juice and Worcestershire sauce to add some flavor with the steam that occurs while cooking
6. Placed beef ribs on grates directly above the pan and adjusted cooker to smoke at 275
7. Once the ribs hit between 172-175, making sure they have excellent bark, I pull them off to wrap them
8. Since these needed some more bark I wrapped in peach paper and placed back on the cooker at 300
9. Once the beef ribs internal temp reached between 200-204 (probe tender) then I pulled and wrapped in towel and placed in cambro allowing to rest for two hours before slicing
