It’s hard to beat an epic BBQ skirt Steak sandwich, grilled, slightly charred flat skirt in this case, a lovely long piece, salted and grilled over moderate heat until it hits medium. Lovely crispy fat, and cut into long slices, and laid with salad, truffle mayo on grilled ciabatta rolls.
I was lucky to be able to source this beautifully marbelled piece of beef from my local butcher for this skirt steak recipe, just be careful not to overcook it.
