Ingredients:
Mutton Tikka Shinwari Style
Double salt then normal
Meat with 20-30 % fats
Beef Tikka Peshawar Saddar Style
1 kg beef
3 Tbs mustard oil
1 Tbs vinegar
Salt slightly more than normal
1.5 Tbs Ajwain
3 – 4 cloves Garlic
1 Ts Black pepper
Overnight marination.
Seekh Kabab / BBQ version
1 kg of mince prefer lamb with 20-30 % fats
1 big fine chop onion (press hard in hands to remove water)
2.5 Tbs roasted & grind Cummins & coriander seeds
1 Tbs garlic powder
Salt as per taste
Kneed well – the more the better
Overnight marination
Mutton Steak
250 g steak
Well salted then normal
1 Ts black pepper / Steak
1 Garlic clove / Steak
Overnight marination
Half Chicken
400 g portion
Well salted then normal
Overnight marination
Quail / Bateer
4 pcs Quail birds
1 cup over heat/fried mustard oil
2 Tbs ground roasted coriander seeds
well salted then normal
3 -4 garlic cloves
Genral tips
– Grill chicken with skin if possible, it keeps the meat tender and moist. Fat helps enhance the flavors
– Chicken needs to be well cook and check that its not pink or red from inside, as it could be very dangerous if its not cook properly
– Ideal chicken is around 800 g whole chicken
– Best to grill on red coals not too high heat
– 10 – 15 min Resting after grilling is important specially for beef and lamb
– To compliment the meats always add greens grill such as Turkish pepper, corn, mushrooms, tomatoes or Tabule salad (https://www.youtube.com/watch?v=_lhFzLbj7hA&t=3s)
