Texas Style Beef Cheeks

For today’s cook I used (2) 3 lbs packages of beef cheeks from HEB. Before you add your seasoning of choice make sure you trim off larger pieces of fat from the beef cheeks. Once that is completed add your seasoning and prepare your smoker. I used my Weber Smokey Mountain to cook my barbacoa beef. My cooking temperature was set at around 275 degrees for the first 2 1/2 hours. After the first 2 1/2 hours on the smoker I pulled off the meat and wrapped it in large banana leaves. Let the meat cook for another 3 hours. The leaves were used to help keep the meat moist and from drying out. Barbacoa is traditionally wrapped in leaves and cooked in a pot that’s buried in the ground with hot coals. The meat is cooked until the meat has reached an internal temperature of 215 degrees. I transferred the meat to a pot and braised it for another 45- 60 min using the juices from the leaves. The meat is ready once it pulls apart. Barbacoa is traditionally eaten in tacos with salsa, cilantro, avocado and cheese.
