Have you ever tried pastrami…. let alone pastrami beef ribs?!! Let me tell you this has yet to be the top thing I’ve ever made and HIGHLY recommend you do this as your next cook…
Use @rainierfoods pastrami brine kit
Start with a large enough contain to hold the GOODS. Add 2 gallons of water and ice.
Mix in brine mix.
Add beef ribs – let sit in fridge for 6 days.
6 days later… remove from brine and rinse off.
Add pastrami seasoning to beef ribs.
For the COOK:
Pre-heat smoker to 275-285 (your choice)
Throw those sexy pastrami beef ribs on..
Sprits after the 3rd hour ever hour with 50/50 apple juice & apple cider vinegar
Pull off at internal temperature of 203-205 degrees (when you probe it and it feels like butter)
Wrap in butcher paper and set in cooler for 1 hour.
Beef Rib Pastrami Sandwich Time:
Take some delish rye bread add deli mustard to both sides.
Chop / slice that juicy meat up.
