hey y’all chill here sunny Costacouldn’t coming at you found somethingof a local grocery tonight they hadeight pound boneless roast on salereally pretty looking roast and Ifigured I’d pick it up and give it a tryit was funny the latency shucks Englishroast I’ve never heard of that I’veheard of one or the other but anyway itwas such a good deal I want to take alimpet this I see a little silver skinon top of itwhat kind of take down off of here butyou know that’s not going to do it foranybody just keep that you know superscreen let’s have some really nicemarbling to this roast honestly thankyou I have some good flavor but again wejust wanna knock some of that silverskin off right there they’re like thissong I get underneath there a little bitjust pushing knock down through thereand you know just take that off no no itwas a nasty silver skin now that wouldbe in feet while we’re trying to put therub on there too it’s not too much trimoff up yo here on the side okay so gotthat I’m gonna put a little oil on itwhich has a little duck fat got two ormore duck fat spray y’all it’s just anolive oil here okayhey I’m going in with some on this isbutchers BBQ this is their steak andbrisket road I just got things indifferent bottles here but I’m puttingthat a little bit of that it’s kind of abase layer all right I think that’llwork nice for this they’re just saltpepper garlic tighten yeah rub is allthis is there’s no bit of silver skinover here on this other side I need toclean that up just a little bit allright but not bad overall don’t want totake too much meat over here with deaththat’s some tough silver skin right downthere you do not want that see that moreit’s real thick through there definitelywant to get through there just kind ofcut that wayI really don’t know I’m gonna put a posta picture the label y’all tell me if youcan you know know a little bit moreabout this cut than I do we mean exactlywhat this isI was pretty interesting but let me goahead and get this cleaned up a littlebit better different like you see don’twant that big old piece of silver skinright there nobody no good there’s sometough all right pull up right there okaya little bit right there all righteverything that’s me okay get back overhere with this olive oil there put thebrisket steak rub this is a versus ofbitches barbecue the next thing I’ve gotI got some Jonesy cheap rub and it’scalled cow it’s his uh basically hisbeef rub okay so I’ve got something thatagain it’s no different bottoms who eattoo much on there you just kept out onhere a good coating all over the roastI packed that in and this is a thickpiece of meat job and let this suckeryou know sit overnight at least somefence I probable cook until tomorrownight definitely fine this is such athick piece of meat not like just asteak sitting up that long we can drawit out on anybody but you just kind ofcut it down some calfile oh yeah youtell us it’s got a little bit of coffeein it oh yeah good stuff there okayand nothing yet no I’m gonna get thisback in the fridge and just let it restso we bout to get this bad boy out inthe yellow why 6:40 I got a load downsome lumberjack competition blendpellets it’s gonna be really good let’sget it out thererollin heat about 270 or so just for thefirst hour – lets go ahead and put thisbad boy yes[Music]all right sit in there hopefully up andsee that I got more flashlight shininghere yeah see how pretty that isoh yeah and again we’re using got somecompetition competition blend lumberjack[Music]most bad boys cooked overnight take alook at it looks absolutely gorgeous gether in there I’m gonna take it out andwrap it up down here on the paper okaydo it probably under 15 20 more minuteslike this you should be good time nowwe’ll put this in the put in the coolerI’m saying just sitting right there justlet it stay warm all right a real goodjob we’re real good I’ll start to crawlthe background once but had this roastresting for about three it shoes sinceI’m gonna work so about six hours nowwrapped up the towel all that don’t youlook down here just look at what we’redealing with hereput it I mean it’s so tender and put itover right here in this crock pot justlike that I’m just going to with myhands look just bust that I mean is thatnot gorgeouswhoo that meet y’all that is a thing ofbeauty right thereand look you got to go get you a pieceright here there’s some crust on thereand everything got a try you know you dohmmcome onthat is flavorful oh wow hey Cal palreally didthat’s one more nowyou got a special sauce a I made up forthis beef put a little bit of that onthere about like that oh man just lookat that look at thatoh yeah it’s calm kind of mixed in thereit’s a little bit gonna give that ataste just to see what that sauce did toit mmm amazing anyway so I just let thatheat load in the crock pot there just tokeep warm by some bridge watching aballgame tonight probably bringingeverything and let them eat it
