You can easily make these beef ribs on any charcoal grill – it does NOT have to be a Jumbo Joe – just follow the same principles and procedure as seen in this video. We also have the steps outlined down below for you.

HOW TO SMOKE BEEF SHORT RIBS ON YOUR CHARCOAL GRILL
Setup your grill for indirect cooking – ie light some coals on one side of the grill, leave space opposite the coals for your ribs. Once the charcoal is lit, add a chunk or two of your favorite smoking wood, cover the grill and let it reach a temp of 250-275.
While you’re waiting for the grill to come up to temp, season the beef ribs with your favorite rub. Let sit in the fridge until it’s time to cook.
When your charcoal grill has reached your desired cooking temp. place the beef ribs on the grill opposite the coals. Cover and smoke until the ribs are probe tender and internal temp is 190-205. Be sure to check the internal temp of the ribs periodically throughout the cook.
