In Jamaica we actually get to enjoy a BBQ flavoured KFC. It is sooo good. Whenever I’m craving that I make this chicken…until I can get the real deal. I don’t know all the KFC secret spices but this definitely satisfies that craving every single time.

CHICKEN:
10 drumsticks, skin on

BUTTERMILK BRINE: (taste the brine before adding the chicken. Marinate overnight ideally)

2 tsp ginger powder

2 tsp freshly ground black pepper

2 tsps dry mustard

3 cups buttermilk (if you can’t get it use 3 cups of dairy or non-dairy milk mixed with 3 tbsps vinegar)

4 sprigs thyme

2 tbsp sugar

1/8 teaspoon cayenne pepper

1/4 cup Franks Red hot sauce (add a little at a time and taste)

1 tbsp teaspoons onion powder

1 tbsp teaspoons garlic powder

1 tablespoon paprika

¼ tsp ground celery seed

4 – 6 pimento grains

1 1/2 – 2 tbsp seasoned salt (Use less if you’re NOT using the buttermilk. In brines the salt content is more than usual)

SEASONED FLOUR:

2 1/2 cups all-purpose flour

1 1/2 tsp onion powder

1 tsp seasoned salt

½ tsp black pepper

1 1/2 teaspoon paprika

pinch of ground celery seed (not salt)

oil or shortening for deepfrying

2 eggs

BBQ Sauce ingredients:

2 1/2 cups ketchup

1/2 cup water

1/4 – 1/2 cup fancy mollasses

1/2 cup brown sugar

1 tsp ginger powder

1/2 tablespoon onion powder

1 – 2 tbsp yellow mustard

1 tbsp honey

1 tbsp Worcestershire sauce

1 tsp chili powder

1 tsp paprika

1 tbsp garlic powder

1 tsp black pepper

1/4 tsp cinnamon powder

1/2 tsp cumin

1/4 tsp turmeric

NOTES:
If you DO NOT WANT TO BRINE THE CHICKEN, just season it like you normally would without the excess seasoned salt and the buttermilk. Then, dip in milk, egg and flour then fry OR just flour and fry it.
