Grilled Chicken Coriandolo with classic pasta salad Recipe
INGREDIENTS FOR CHICKEN CORIANDOLO:
– Fresh coriander 1/2 bunch
– Lime zest 1 tsp
– Salt 3/4 – 1 tsp
– Black pepper 1/2 tsp
– Lemon juice 1 tbsp
– Coriander powder 1/2 tsp
– Olive oil 1 tbsp
– Garlic 1 clove (chopped)
– Green chili 1-2 small
– Chicken (boneless fillet) 500g
– Butter for cooking 1-2 tbsp
DIRECTIONS:
1. Grind all ingredients in the chopper until a smooth paste is formed.
2. Slice the chicken fillet (don’t cut the end) open it and flatten out.
3. Marinate the chicken with olive oil and coriander marinade. Leave for an hour.
4. Heat a pan, add butter.
5. Cook the chicken on high flame, till both sides turn golden.
PASTA SALAD INGREDIENTS
Tomato 1 small (diced)
Olives 1/2 cup
Pasta 200g dried (boiled)
Cucumber 2 large
Feta cheese 1/2 cup
Salad leaves 1.5 cups
Olive oil 2-3 tbsp
Black pepper 1/2 tsp
Salt 1 tsp
Chopped garlic 1 clove
DIRECTIONS:
Mix everything and serve with the chicken!
