Easy Recipe for Chicken Fajitas on the grill. This sugar free fajitas seasoning mix makes the dish stand out. To make the Seasoning follow this recipe:
1 Tbsp Chili Powder
1 Tbsp Cumin
2 Tsp Garlic Powder
1 Tsp Paprika
1 Tsp Oregano
1 Tsp Salt
1/2 Tsp Black Pepper
This is enough seasoning for about 1lbs of chicken. you can multiply this as needed.
This dish made about 4 servings and the ingredients are listed here:
1 lb Chicken Breast
2 Bell Peppers Cored and sliced into strips
1 Small Onion Cut into strips
Cut up peppers and onion into strips and set aside. Place Fajita Seasoning on chicken and rub in, be sure to coat both sides.
Pre Heat your grill and oil the grill grates while warming up. This step helps prevent sticking on the grates and can save a lot of time. make sure the grill is hot, around 500f/260c
Place Chicken on the grill and close the lid. in about 5 mins turn over. let cook for another 5 mins and then check the temperature of the meat with a digital thermometer. Chicken is safe to eat at 165f/75c. When the chicken is done remove from the grill and allow to rest. Now cook the peppers and onions on the grill. I used a grill pan with a little canola oil but you can use a cast iron skillet or non stick grill mat to accomplish this as well. I lightly coated the vegetables with the oil and sprinkled some of the Fajita Seasoning on them. Grill the vegetables until tender, about 5-7 mins. remove from heat and place aside.
Cut up the chicken into thin strips and mix with the vegetables. Serve with your favorite toppings. We chose some fresh made salsa and shredded cheddar cheese but you could add any thing you like.
Variations: You can increase the paprika if you like more spice or you can also add red chili flakes. Cut back on the paprika to cool things down.
