DELICIOUS GREEN RICE WITH GRILLED CHICKEN SUPER EASY!!

Green Rice with Grilled Chicken
Ingredients
Green Rice
Rice – 1 cup
Green Onion (only green part)
Fresh Coriander
Mint Leaves
Green Chillies
(all together one cup)
Lemon – 1 tbsp
Salt – 1/4 tbsp

Grilled Chicken
Chicken Breast – 1 large piece
Ginger – 1 tsp
Salt – 1/4 tsp
Mustard Paste – 1 tsp
Black Pepper – 1/4 tsp
Oil – 1 tsp
Cheddar Cheese – 1/2 cup

To Stir Fry
Cut veggies – 1 cup (sliced onions, baby corn chopped, sliced mushrooms)
Oil – 1 tbsp
Soya Sauce – 1 1/2 tsp
Chili Sauce – 1 1/2 tsp

Method
Make slits in the chicken breast. Once you have done this create your marinade by mixing the black pepper, ginger, salt and mustard paste. Add the chicken breast to this and keep for one hour or more. Add one green chilli as well (optional). Boil one cup rice. Make the green mixture by grinding fresh coriander, mint leaves, green chilies and green onion (all together should be one cup). To the green mixture add 1 tablespoon lemon juice and 1/4 teaspoon salt. Add the green mixture to the boiled rice and mix. Keep aside. Heat one cup oil and stir-fry the cut vegetables for 2 to 3 minutes. add 1 tbsp soya sauce and 1 tbsp chilli sauce. Now grill the chicken for 4 to 5 minutes on each side. If you do not have a griller you can fry the chicken. Sprinkle half cup cheddar cheese on top of the chicken and covered with parchment paper until the cheese melts. Plate your dish. garnish with some roasted almonds. I used a sizzling plate which is optional. Enjoy it while it is hot. ❤️ ❤️
