[Music][Applause]hey welcome to backdraft barbecue Petecoming at you one more time with how tocook this and today on the menu becauseright now in this time of the year it’sSuper Bowl season we’re gonna do somehot wings and hot wings are the bestwhen it’s freezing cold outside it’sgonna be amazing first things firstokay you’re dealing with raw chicken soobviously safety I always like to weargloves especially when I’m working withpoultry what we’re gonna do is we’regoing to separate these because when youbuy the wing in the store obviously itcomes with the drum and the wing partand the tip so we’re gonna chop the tipoff and then we’re gonna take the drumand we’re gonna separate that from yourway okay on a hot wing again you’ve gotthe leg you’ve got the wing and you’vegot the tip some butcher shops willseparate it for you but the easiest wayto do is you take the knife and you justfind where the bone ends and you just ohjust like that same thing down here justkind of move it around you’ll find thejoint and we’ve got a hot wayboom all right so I’ve got all mychicken prepared now here is the bombdiggity section where this video justtakes off you know when you have friedhot wings how they’re krispity krunch dand they’re delicious and on a grillchicken tends to like just dry out andbe disgusting well here’s a secretweaponbaking powder not baking soda bakingpowder so two pounds of chicken twotablespoons of baking powder and then Ialso use two tablespoons of salt about atablespoon of pepper and I also put somechili flakes I like those Korean onesthe best I put a little in there just tokick it up a notch all right so whatwe’re gonna do here is we’re gonna takethese chicken wings we’re gonna put themin this and we’re gonna sprinkle thebaking powder on top of them almost likewe’re breading them okay and then we’regonna mix them upwe’re gonna mix it real good we’re gonnasprinkle a little more we want to evenlycoat these wings so you can kind of seethey look like they’re breaded now whatthe baking powder is doing is it’slowering the pH of the skin and it’sdrying it out so when we put these onthe grill in scientific fashionpyrolysis is gonna take place and it’sgonna make them crunchy now we’re gonnatake the salt in the pepper we’re gonnagive it a generous coating and we’regonna move them around a little moreguys salt is good for you all right atthis point I normally light my egg andlet it get up to temperature but I’vealready done that so I’ll see you overthere in just a second we’re cookingthis direct method no plates that are nonothing just coals rocking and rollingand we’re doing it at four bills so Igot it right at 400 right now we’regonna add this over remember this is hotso be careful when you open it a nicebit of charcoal in there and we’re gonnathrow these on it don’t matter which wayyou do it just make sure that they’respaced out a little bit we want maximumcooking total cook time should be about40 minutes it takes a little while tocook on this method but it is worth ittrust me on that friends take the littleniblets that are left and just sprinklethem on top all right whoo okay it’sbeen about 10 minutes we’re gonna openthis up burp it slowly and we’re gonnaflip the wings wow they already startthey’re already starting to look prettygood actually they’re looking reallygood niceagain that baking powder just dries offthe skin and changes the pH so that whenyou’re cooking them on the grill theydon’t get all soggy and gross theyactually get crisp oh fide certifiedChristmas fire okay we’ll see you inabout another 15 minutes we’ll flip themover againall right folks it’s been about 40minutes we’re gonna check these wingsagainsee they should be just about done manthey are smelling delicious oh yeahthese babies are looking mighty crispyoh yeah I’m liking this I like it a lotnow the beautiful thing about this isthat you can dress these any way youwant you want to even naked huh noproblem you want to eat them naked wellI’m not gonna judge but you can doBuffalo we’re gonna do some Thai chilliseasoning on these when we get insidebasically you’re just gonna put them inthe stainless bowl and toss them withthe sauce or or you can serve them plainand serve sauce on the side for dippingyou know whatever it takes let me giveyou a close-up whoo fire in the holewe gave it close up on one of thesebabies I mean yeah let’s try it oh if Idid a taste test between one of these itwas on a fryer and one that was cookedon the egg like this I’d probably thinkthis one was the fried one it pops it’ssuper juicy it’s got that crisp that youwant anyways and it’s actually healthierfor you oh I didn’t actually say thatall right give me a comment down belowlet me know what you think of this ifyou try this recipe hey get out of thiswhy do you keep stealing all my food I’mtrying to make a video all right if youliked it throw me a comment down belowplease subscribe let me know what youthink and as always be safe out there[Music]you
