Grilled Chicken Breast Stuffed with Prosciutto and Basil!

Angie Rouse is back in the Spartan Kitchen with a delicious and nutritious chicken meal!

Ingredients:
♦️4 prosciutto slices
♦️1 tablespoon coarse grained mustard
♦️4-8 fresh basil leaves
♦️20 fresh mozzarella pearls
♦️4 whole skinless chicken breasts; about 7oz each

Directions:
Prepare the grill.

On a work surface, spread prosciutto evenly with mustard. Top with basil leaves and mozzarella. Roll up each prosciutto slice.

Pat chicken dry and put on a work surface; top down. Form a long, thin pocket in the chicken for the prosciutto roll. Begin at the thicker end and slice horizontally with a sharp knife three fourths of the way through the center. Fit the prosciutto roll into the pocket.

Spray with non-stick spray and salt and pepper. Grill about 5-6 minutes per side.
