In this video I show you how to make two delicious, quick and easy sandwiches for lunch-times using leftover chicken from making my weekly batch of ‘Chicken Bone Broth’.
|It’s a sin to waste the chicken leftovers from your broth, or any other chicken dish for that matter. A viewer called Jan pointed out to me how bad it was that I wasted the chicken from my broth, and so to make up for it I have made this video showing how I am putting it to good use now.
Firstly a toasted brioche bun, with creamy coleslaw, rocket and spinach, served with a hearty filling of the griddled chicken basted in a home-made BBQ sauce. Secondly, griddled corn tortillas wraps, stuffed with pesto chicken and sautéed onions and peppers.
Next week, a delicious curry made with garlic, tikka paste, coconut milk, French beans, red peppers, chick peas and fresh coriander. Served on basmati rice with toasted almonds and sour cream. Subscribe and hit the bell notification icon so you do not miss this video when it is uploaded!

For the BBQ sauce
1. Tomato Sauce
2. Worcestershire Sauce
3. White Wine Vinegar
4. Maple Syrup (Optional)
5. Fine Brown Sugar (not demerara)
6. Paprika

2. Sliced White Onion

4. Green Pesto
