Martin’s Kitchen-Grilled chicken breast, sweet potato puree, spinach and charred tenderstem broccoli

Hi folks, welcome back to Martin’s Kitchen!

I am a chef based in Co. Antrim, Northern Ireland, bringing you quick and easy, but more importantly, tasty recipes that you can use to impress friends and family, or simply enjoy some variety in your weekly meals!

In today’s video I will be showing you how to make a quick and easy, healthy dish- Griddled chicken with sweet potato puree, spinach and charred tenderstem broccoli. This is a really straightforward dish that you can have prepared and cooked in 30 mins.

Ingredients
Serves 2
• 1 large or 2 small chicken breasts
• 2 large sweet potatoes
• 2 bag baby spinach
• 1 packet tenderstem broccoli
• Spices- cumin, ginger, nutmeg, cinnamon (at least 2 of any of these)
• 1 red or green chilli
• 1 small fresh ginger
• 1 clove garlic
• light olive oil
• 1 lemon
• Salt and Pepper
