Oven baked chicken wings 2 ways (BBQ & buffalo)

SERVES: 4

INGREDIENTS:

16 whole chicken wings
1 tbsp plain flour
1 tbsp baking powder
salt
pepper
1 tsp chilli powder
1 tsp smoked paprika
1 tsp cayenne pepper
1 tsp ground cumin
1 tsp ground turmeric
hot sauce
butter
BBQ sauce

METHOD:

Preheat your oven to 200°C / 400°F.

Cut your chicken wings at the joint and remove the tips. Throw the tips away and add the other pieces to a large mixing bowl.

Add the flour, baking powder, salt, pepper, chilli powder, smoked paprika, cayenne pepper, ground cumin and ground turmeric to the wings. Stir the ingredients so that all the wings are evenly coated.

Place the wings on a wire rack on top of a baking tray and bake in the oven for 20 mins.

Whilst the wings are cooking, make the buffalo sauce. Heat a small saucepan on a low flame. Add the hot sauce and the butter. Stir until the butter melts. Bring the sauce to a boil and simmer until it thickens slightly. Once the sauce has thickened, remove the pan from the heat and leave the sauce to rest.

When the chicken wings have finished cooking, flip them over and cook for another 30 mins. After that, remove them from the oven and switch the oven to the grill setting.

Transfer ½ the wings to the pan containing the buffalo sauce and stir to coat. Transfer the other ½ to a mixing bowl, add the BBQ sauce and again stir to coat. Transfer the wings back to the wire rack and grill until they caramelise (this part doesn’t take very long at all so watch the wings closely so that they don’t burn).

Once the wings have finished grilling, they are ready to serve.
