Peri Peri chicken / wings Recipe :
Ingredients:
-6 Whole Chicken Leg Pieces (put deep cuts) & 1/2 KG Chicken Wings (i took half wings half chicken legs – u can take take anything according to ur choice)
– 24-25 Round Whole Red Chillies
– 2tbs Paprika Powder
– 5tsp Salt (or As Desired)
– 1 & a Half Tbs Oregano
– 1tsp Red Chillie Powder
– 1 & A Half Tsp Black Papper Powder
– 2 Whole Red Bell Pappers ( Take Out The Seeds And Cut)
– 3Tbs Lemon Juice
– 1 Small Piece Ginger
– 1/2 tsp Red Food Color
– 3 tbs Vinegar
– 2 Tbs Oil
– CharCoal For Smoke at the end
(u can marinate all chicken legs , all wings or whateever u want i took half chicken half wings- if u want to just marinate 6 piece of chicken legs , marinate them and freeze left over marination paste for next time– totally upto u)
Marination Method :
– Mix All Dry Spices in a bowl and mix them well.. ( red whole chillies , paprika powder, Salt , Oregano Red Chillie powder , black papper powder )
– add red bell pappers into a blender
– add lemon juice
– add ginger piece
– add red food color
– add vinegar
– add oil
– BLEND THESE ALL ABOVE INGREDIENTS WELL
– now add all mixed dry spices into blender ( red whole chillies , paprika powder, Salt , Oregano Red Chillie powder , black papper powder
– BLEND WELL
– marinate Chicken Leg Pieces well and take them out in another plate or bowl
– add wings into left over peri peri marination paste and marinate wings as well (marinate them too)
COOKING PROCESS :
– grill chicken leg pieces and wings on grill pans (seperately) – (u can bake or do bbq on bbq grill as well)
– once they are cooked properly – turn off the stove
– add HOT CHAR COAL on a foil – put oil and cover immediately and let it get smoked for 3-4 minutes atleast
