Makes about 40-45 crêpes (both savory and sweet)
Batter:
1 liter / 30 oz. milk (per each type)
Flour – ~ 4.5 cups
6 eggs
Salt and seasonings to taste (for savory)
Sugar, vanilla sugar, cinnamon (for sweet)
Vegetable oil
Fillings:
#1 Carrots
Onions
Mushrooms
Seasonings
#2 Carrots
Onions
Chicken
BBQ sauce
Seasonings
#3 Apples
Cinnamon
Sugar
Instructions:
Batter:
In a large bowl or pan, pour in milk, add 6 eggs, mix together.
Start adding flour (better sift it). And mix. Add flour gradually until you get to the right consistency.
Add seasonings, salt, and oil (for savory) or sugar, vanilla sugar, cinnamon, and oil (for sweet).
Fry crêpes on the preheated skillet on a little oil.
Make sure they are flat and thin. To make them thin, bend the skillet a little to the side, start pouring batter from one side, and spin the skillet until the batter fills the entire surface.
Fry for about 2-3 minutes on each side on medium-low fire.
Filling 1:
1. Nicely chop onions, throw on a skillet with hot oil.
2. Grate carrots, add to the onions.
3. Cut mushrooms, add to carrots and onions in the skillet.
Add seasonings to taste.
4. Fry until mushrooms are done and the liquid is gone.
Filling 2:
1. Nicely chop onions, throw on a skillet with hot oil.
2. Grate carrots, add to the onions.
3. Cut chicken into small cubes, add to the skillet.
Add seasonings to taste, and fry the chicken until it gets soft.
4. Add BBQ sauce, and fry until the chicken is done, and not much liquid is left.
Filling 3:
1. Peel and core the apples.
2. Cut them into small pieces (keep them in water until you’re done cutting all of them, so they don’t go dark).
3. Through apples on the skillet, add sugar and cinnamon.
4. Fry apples until they caramelize, stirring them often.
There are many ways you can fill the crêpes and fold them. Those I use in the video include a roll, sack, and cone.
