Smoked Chicken Wings | Camp Chef Pellet Grill Crispy Wings

Welcome back to Anderson’s SmokeShow! Today we are going to take my Camp Chef Pursuit 20 on its maiden voyage and make some CRISPY Smoked Chicken Wings! Check it out!

Smoking chicken can be troubling for people. One of the biggest complaints that I hear is that the skin is rubbery. There are two reasons for that… temperature is too low, or the surface of the wings is too moist. Now some people like to sprinkle on some baking powder.. which works, but I like to just crank up the heat! That’s what we do here today!

I ALWAYS marinate my chicken before I throw it on the grill. Usually just some simple Italian dressing or anything with a little vinegar base. Today I used a white balsamic vinaigrette and marinated the wings for 1 hour prior to cooking. I strained the excess dressing off the wings and seasoned them with some of my favorite Spiceology rubs.

I set the Camp Chef pellet smoker to the high smoke setting which translates to 220F and the highest possible smoke. I left it here for 30min. At this point I flipped the wings and cranked the pellet grill to 400F. Flipping the wings several times to ensure evenness and checking the internal temperature with my instant read, I pulled these wings at 165F.

Not going to lie… these wings cooked quick and were SUPER tender and JUICY! Simple and perfect meal!!
