Spicy grilled chicken with Carrot rice

For grilled chicken

• 1 tsp of Kashmiri chilli powder
• 1 tsp of garam masala
• ½ tsp of black pepper powder
• ½ tsp of turmeric powder
• 4 tsp of natural yogurt
• 2 pieces of ginger chopped
• 4-5 cloves of garlic
• 1kg of boneless chicken

1. Crush the ginger and garlic until it is a paste.
2. To marinate the chicken, add 1 tsp of the ginger garlic paste, yogurt, turmeric powder, black pepper powder, garam masala(mix of different spices) and the chilli powder.
3. Marinate the chicken with the spices and the yogurt well.
4. While mixing, add some salt to it.
5. After marinating the chicken with spice mix, leave it aside for ½ an hour to 1 hour.
6. For grilling the chicken, pre-heat the Grill and brush some oil in the grill to make sure that the chicken does not get stick to the grill while it is grilled.
7. After one side is fully grilled, brush some clarified butter/oil in that side and turns it to other side to get that grilled.
8. Once both sides of the chicken is grilled and become golden brown, it is ready to be served.

For Carrot Rice:

• ½ tsp of black pepper powder
• 1 tsp of cumin seeds
• 1 tbsp of ghee(clarified butter)/oil
• 500g grated carrots
• 100g of frozen green peas
• 2 cups of basmati rice cooked in lightly salt water and drained

1. When the pan is warm, add some ghee and after that add the cumin seeds.
2. Add the green peas and cook it for 2 minutes.
3. Add the carrots and some salt and sauté it.
4. Add the balck pepper powder and add the rice , mix it well in a low flame
5. Gently mix and make sure that the cooked rice does not get mashed.
6. Turn the hob off and it is ready to serve.
