Tasia and Gracia’s Indonesian Grilled Chicken (Ayam Panggang)

Indonesian Grilled Chicken (Ayam Panggang)
Serves 4 Prep 10 mins Cooking 35 mins

3 tbs vegetable oil
800ml coconut milk
2 tbs tamarind paste
1kg chicken thigh cutlets
Indonesian sweet soy sauce (Kecap Manis), to drizzle
Fried shallots, to garnish
1 long red chilli, thinly sliced
Salt, pepper and sugar, to taste
Spice paste
100g long red chillies
100g shallots
100g garlic cloves, peeled
50g lemongrass stalks or 2 tbs lemongrass paste

Preheat grill on high. To make the spice paste, process the chillies, shallots, garlic and lemongrass in a food processor to form a smooth paste.
Heat the oil in a large wok or frying pan over high heat. Cook the spice paste until fragrant and dry. Add the chicken and cook, stirring to make sure the chicken is coated in the spice paste.
Add coconut milk and tamarind paste and cook the chicken for 15-20 mins or until the cooked through and sauce is slightly reduced. Season with salt, pepper and sugar to taste. Transfer the chicken to a lined baking tray, keeping the coconut milk mixture in the wok.
Cook chicken under the grill for 10 mins or until the chicken begins to char and the sauce is caramelised.
Meanwhile, cook the coconut milk mixture in the wok until it is slightly reduced.
Pour some of the coconut milk mixture over chicken. Drizzle with the Indonesian soy sauce and garnish with fried shallots and chilli.
Tip: Serve the chicken with your favourite vegetables and steamed jasmine rice.

hi everyone I’m Tasha and I’m Gracia andyou might remember us from my teachingrule 2016 since then javi and I’veopened our first restaurant makan inMelbourne CBD but due to the currentsituation we are temporarily closed fordining in but we’re still open for somedelicious takeaway we know that a lot ofyou are stuck at home and you know haveall these time in your hands but that’shere and I will show you how to make oneof our family favorite recipes we’regonna be cooking I am from them orIndonesian grilled chicken it’s sodelicious super easy so let’s getcooking for Indonesian grilled chickenrecipe we’ve got a simple spiced spaceconsists of garlic chili shallots andlemon grass so Tasha we’ve gonna blitzthis up into a smooth pastealright let’s make the spice babyso see you want it to be a smooth spikespace you want to get your pan nice andhot so we’re now we’re gonna be addingabout 3 tbsp of vegetable oil and nowI’m gonna be adding the spice paste thatyou made earlierthere’s no delicious and you know thewhole house is filled with all thatshallots lemongrass garlic chewyit smells like Southeast Asia so thespice base is cooked off and you can seethat it’s now very fragrant and it’squite dry so we’re gonna be adding our 1kilo of chicken pie cutletsso you want to get the chicken nice andbrown and sealed so they’re gonna be any800 ml of coconut milk oh my god itlooks so good we’re gonna be addingabout 2 tbsp of tamarind paste we’regonna now season it with some salt andsome sugar and pepper so while ourchicken is cooking and the sauce isreducing we’re gonna be accompanying ourIndonesian grilled chicken with somebroccoliniso we’re gonna be serving this grilledchicken with some gentleness can writethe chuckles earlier now to finish itoff we’re gonna put the chicken in anovenproof tray and we’re gonna put it inthe oven at 200 degrees for about tenminutes just to get a bit of color andchar all right guys so the chicken iscooked through let’s put it on a platefinish it up with a little bit moresauce that I had some fried shallotsfresh chilli and we’re gonna drizzle alittle bit of Indonesian sweet soy sauceor ketchup man yes oh yeahso there we have it our what’s fordinnerIndonesian grilled chicken served withjasmine rice in your favorite greenvegetables
