BBQ Pork Ribs w/ Cole slaw

EaseE BBq Pork Spare Ribs w/ Cole Slaw
Prep time: 20 minutes 2 hours 15 minutes braising time
Yields: 2 serving / 2 racks- 6 oz. slaw

INGREDIENTS
• 2- 3# pork Ribs
• 18oz -Sweet Baby Rays Honey BBQ Sauce
• 18oz. -Sweet baby Rays Honey Chipotle BBQ Sauce
• 28 oz.- Water ( rinse out bottles as well )
• 4 Tbsp.- BBQ ( McCormick’s) Seasoning
• 1 ½ #- Shredded cabbage with carrots ( Cole Slaw blend )
• 1 cup- Aquafaba or mayo
• ¼ cup- sugar
• 3 Tbsp- cider vinegar
• 2 tsp.- celery seed
• 1 tsp- salt and pepper
• 2 tsp – horseradish ( prepared )
• 3 Tbsp.-lemon juice

INSTRUCTIONS
Ribs;
1. Dry of ribs with towel
2. Remove Peritoneum ( membrane on ribs ) – silver skin
3. Dust with BBQ Seasoning- work in with hand – massage in
4. Place in Foil 4” pan
5. Add 8 cup total BBQ sauce and water
6. Cover tight with foil
7. Place in Conventional oven at 400 degrees for 2 hour 15 minutes
8. Fork tender – do not over cook
9. Drain stock and reduce by ½ -simmer to reduce – stock pan
10. Brush on Reduced sauce
11. Grill high or broil in oven till Caramelization appears- black char
12. Cut ribs ¾ way through and serve
13. Drizzle or brush extra sauce for love!

Cole slaw;
1. Wisk vinegar and sugar to large bowl-dissolve sugar
2. Add Aquafaba or mayo and rest of ingredients until smooth
3. Add to Cabbage , mix well- let sit 20 minute cold before service

Serve with roasted or grill corn on cob- Great summer fun!!!
