Give Them a Try.
Ingredients:
1: Two Racks of spare Ribs
2: Meat Church Holy Gospel Rub
3: Brown sugar
4: Sweet Baby Rays honey BBQ Sauce
5:Butter
Method:
Get the Ugly Drum to temperature Around 250 F
Add Some Cherry Wood
Check at 2 or 3hrs ish
Then wrap in foil
and let them go until tender
Use a Thermapen to check texture
Take it up to 180 F /185 F ish

[Music]hi everyone Ryan from Ryan Geesbarbecuing stuff today I’m going to bemaking some pork ribs under thecollaboration hashtag how I built my uniass now what I’m gonna be doing I’mgonna take you for a walk around my drumit’s a bit old and looking a bit tiredbut she cooks well I’d like to take thisopportunity to thank big blue BBQ forinviting me along on its collaborationgive a shout-out to umthey’re liking my videos and stuff likethat in groups so it’s really good to beworking with you as well so I’m going toget to cooking these pork ribs I’m goingto be rubbing them down with some meChurch Holy Ghost ball and we’re goingto glaze them off with some sweet babyray maybe break it down with a littlebit of cider vinegar or something justto thin it out make it easy to brush onso let’s get to cookingokay so I’ve got these ribs all set outI’ve trimmed them up you don’t reallywant to see me true ribs up I’m sureyou’ve seen people do it a million timesbefore so here we go just gonna put someof this meat Church um only gospel rubon it’s a really nice that’s gonna givea run over the topso a really good flavor to this rough Ilike it a lotyou’re over dinner back sir[Music]and after Gophers so heavy on this sideis just a bone so you’re taking themembrane off ya little bits of meevery day this guy forwardsto the backthrow light on the top of it on thebackside for this onegood pat-down make sure where that rocksin there no more look these over goingto go in a bit heavier on this side andthat’s going to give us a really goodcolorit’s gone quite heavy there do you knowwhat stuff so nice I don’t get might goback and get side another gate justbecause I canmaking this sit there for about half anhour we’ll get the drum ready so there’smy basket I’ve put some cherry wood onthere now I’m just gonna put my heat theflip drum which is an old pizza pan itdoes the trickit works really well it’s gonna use onegreat for these ribsnow slap on ribs on ya[Music]not that it’s gooda little heat probe on so I know what’sgoing on think you sityour wife is gonna let me know what’sgoing on when I see them in a few hoursokay so the EGS is running at about 250but lovely fin blue smoke coming out thetop there’s the way um laughs a lottemperature probe I got that sent overfrom the USA from New York and thenthere’s another one down there just fromeBay – incidentally the booties or somelater of them I just got them not flatme a depo they called to me in the UK aswe go down the drum you can seem to cutpipes they’re just standard plumbingthings put some stickers on from workplease do not pull handle because I workfor a minute resupply up they wouldfighter jetsand then you can see my Inlet pipes butat the bottom they’re all 3/4 everythingon this drum is 3/4 just to make itsimple and it’s easier to control thetemperature you just put one on I’lltake mine off and it’s a very verystable drum every time I add a young addor subtract a cap it’s roughly 20degrees so it gives me a fair bit ofcontrol to the clerk and now I want itto go so it’s perfect it’s a really nicelittle drum it’s um it’s worksimpeccably over the years and it’s ashining example of self built very proudof it made a few videos so yeah UDS isrockman groups have been running about275 well two and half hours and you knowhave a quick look and see if I’m goingto wrap them so they said let’s take alookyeah nine o’clock itlook bad at all just put the lid on sowe don’t get a spike and then wrap themup I think okay first thing I’ll do isjust put down a little bit of brownsugar one it’s gonna hold downeverything hopefully and – can you giveus a little bit of sweetness down alittle bit of sweet baby Ray’s wouldn’tlove that oh yeah here it comes that nowind and then walk bangthat’s going to give us some a nice paceof both flavor a little bit of ciderthis is warm cider by the wayjust for a little bit steamgrab a rack of ribs these are prettygood feel about them alreadywe repeat the process again not too much[Music]sugar[Music]and we’re gonna put a little bit ofbutter on this one[Music]now if we got it for a wrapsit down all nice and tightthat’s it they can go back on the pitnow so I thought I put a bit of butteron these corn on the cob and trap themon the UDSit’s nice side so they might as wellcook a little more the ribs are sufferedup Oh cook down I say come one sidethat’s itit’s like Christmas right just gonnagive these a quick probe now perfectyeah you got flexible there huh oh andyou seeput off my corn on the cob okay so theseribs have had a bit of a rest and I wrapthis one it’s going on with itbendy that’s a good signoh it smells goodoh right it’s full out the way you putit on the chopping board right so givethese a quick cut upoh that’s softshow you the camera see if we can seewhat’s going on mmmfall off the bone just now our I can copmukaratperfect for memmm-hmm the ribs look amazing that nightlook at the color on them nice and shinysticky it’s fall
