This is a super simple ribs recipe and it starts with some Spare Ribs. I remove the membrane which will result in some super tender ribs. I also trim and square up the ribs so that the thickness is uniform.

Using yellow mustard as a binder I proceed to coat both sides of the ribs with one a great pork rub. Once the ribs are coated I give them a few minutes to sweat before placing them into the charcoal smoker.

I set my Masterbuilt charcoal smoker to 235F and smoked these ribs for 3 hours…spritzing with apple juice about every hour or when it looked as if the surface was dry. After 3 hours I remove the ribs, wrap in foil along with some brown sugar/butter/bbq sauce, then return to the smoker for 1.5 hours. At this point I remove from the smoker, sauce both sides and return for the last 30 minutes.

As you can see my Masterbuilt smoker did a great job with these bbq ribs! They were tender, juicy, flavorful, and had a great bite! I could taste the charcoal which was great! I can say that I was even able to taste more charcoal flavor than my Masterbuilt Gravity Series 560.
