Grilled Pork Belly (Samgyeopsal-gui: 삼겹살구이) and Galbi (Kalbi) Korean Marinated Rib BBQ at home

Galbi (or Kalbi, 갈비), Korean beef short ribs, is one of the most popular barbecue dishes in Korean homes, especially for special occasions and gatherings.

Another popular barbecue dish is called samgyupsal (meaning three-layer meat), samgyeopsal-gui (삼겹살구이), or grilled pork belly is a type of gui (grilled dish) in Korean cuisine.

In this recipe, I would like to share with you how I marinate my Galbi or Kalbi as well as Samgyupsal or samgyeopsal-gui along with the Korean BBQ dip.

[Galbi Marinade]
4 lbs Beef Short Ribs (thin slice) –
1 small Kiwi (grated) –
1 cup Soy Sauce –
1 cup Brown Sugar –
1/4 cup Mirin –
1/4 Sake (Japanese Rice Wine) –
2 tbsp Sesame Oil –
1 tsp Black Pepper –
8 cloves Garlic (minced) –
8 stalks Green Onions –

[Samgyupsal Marinade]
3 lbs Pork Belly (thinly sliced) –
2 tbsp Sesame Oil –
3 tbsp Sake (Japanese Rice Wine) –
1 and ½ tbsp Salt –
1/2 tsp Pepper –
1 stalk green onion (chopped) –
Dried Red Chilli (cut thinly) – optional –

[Barbeque Dip]
1 and ½ tbsp Gochujang –
1 and ½ tbsp Miso Paste –
1 tbsp Sake –
2 tsp Sugar –
1 tsp Sesame Oil –
1 tsp Garlic (minced) –
