How to BBQ Pork Belly Burnt Ends

I LOVE pork belly. It should practically be its own food group 😉 It was a lot of fun showcasing this recipe and the stepped approach to producing some amazing BBQ pork belly burnt ends on the Big Green Egg.

After slicing the pork belly into approximately 1 inch cubes season the meat with your favorite BBQ rub. I ended up using two different kinds. For ease of use place them all on a wire rack to put into the BBQ. I cooked these at 250 degrees with lump charcoal and apple wood until they had great color and and bark formation. Be sure to spray the meat with apple cider vinegar throughout the cook.

I put the burnt ends in a tin pan with BBQ sauce, butter, more BBQ rub, and apple cider vinegar and back into the BBQ it went. I was going for an internal temperature of 200 degrees and for it to pass the tenderness test. Make sure the probe goes in nice and smooth. That is when you know they are done and ready to eat.
