A perfect rack of smoked pork ribs is a thing of beauty, and unlike a lot of barbecue cuts, it doesn’t take that long. Unlike the 3-2-1 method which is typical of most ribs, Australian ribs tend to be less meaty, so we cook to colour, bend and glaze.
