well hey guys welcome back to BartLowe’s barbecue and I’m here with mydaughter they hear when they hold I amI’m seven she’s awesomeshe is a little chef and then this isBart Lowe’s barbecue in our backyard welove to make barbecue for our familydon’t we yeah it’s so much fun welltoday that’s right we’re bringing to youbacon-wrapped smoked pork chops andyou’ll just need bacon that’s rightporkchops also need your favorite winebecause part of the process is we’regonna brine the pork chops pork chopsreally saturate the meat really well ifyou do that even if you have only 30minutes it’s totally worth brining yourpork chops and you can use your favoriteseason we’re using barbecue that’s rightit’s just simply salt and pepperactually it’s 16 mesh pepper and somekosher salt one of my favorite recipeshonestly really simple classic somethingthat I learned from Aaron Franklin’smaster class totally cool BBQ class thatyou haven’t taken that so we’re gonnashow you what this process looks like tobacon wrap after we do the briningprocess throw it on the kimono Joe oranyone in direct heat and let it smokefor an hour to hour and a half as mybeautiful dancer is getting excited forour cooking today so let’s check it outso what you only need to wrap the baconis some gloves and then you wanna takethe bacon and wrap it like this yeah youwant to get the backside wrapped aroundreally nice if you have toothpicks youcan use a toothpick to wrap the porkchop tightly around the pork chop justlike this so whenever you put it on thegriddle you take it off it’s secure sowe put toothpicks in there and thenwe’re going to put it on the commoditymy friends we’re not going to putnice smoky flavor I went ahead and putsome apple wood chips on there we’regonna let it smoke for the durationaround 250 to 275 we’re looking againmore for internal temp than we are aspecific timeframe so we’re gonna checkback every 30 minutes looking at thatour to our 20 mark and then it should beat the tunnel temperature we want readyto slice this and eat it enjoy itwell thanks for tuning in and watchingus and make bacon or a pork chops if youreally like this video like it subscribeshare it with your friends hey this is areally quick and easy way to make porkchops on your charcoal grill or yourKamata joe or what ever you might useyou literally just need to put that porkchop in a nice brine let it sit for 30minutes to 2 hours whatever yourpreference might be dry it you mightwant to put additional rub if you wantthen you can wrap it in bacon you canobviously do pork chops without baconthat’s what they’re mainly known for butI wanted to experiment and do somethingnew and I love bacon so wrap it you canput it on indirect heat on the Camanojoe and let it cook to temperaturenecessary time so for this took aboutactually 45 minutes it was a littlequicker than I thought and I can broughtit up to 145 to 150 and got that baconnice and tender and right in betweenthat crisp eNOS so tasted it had my mygirls taste it and they approved tasteddelish and so now we are going to enjoythat for lunch hope you have a wonderfulday and tune in as we do these weekly tobi-weekly barbecue videos from mybackyard to yours have a good day[Music]
