I want to share with you some reallycool recipe for some amazing spicybarbecued pork ribsso check it out so for my today’s recipeI’m gonna use some really good qualitygood quality pork ribs for the marinadeand the sauce I’m gonna use some garlicshallots sriracha sauce two types ofketchup I always use two sorts throughthe mild sort and the spicy swordbecause I like it like a really spicy ofcourse chili peppers and some worsedeception sauce just for the umami andthe finish all right so let’s get to itfirst I’m gonna spice up the ribs or Ican actually do it already in and myoven tray so just lay them out I’m gonnause some of my spice rub the recipe formy spice rub you can find on the sloppyjoe recipe basically it’s just like whatone my own spice mixture so make sureit’s like completely covered and onething I’ve seen many chefs taking outthe white membrane of the ribs I thinkit’s a good thing to do in a restaurantbut I personally like to chill a littlebit on my meat so that doesn’t worry meespecially when I’m gonna cook the ribsfor quite a long time I mean stood himin the oven with a lot of marinade sothat membranes gonna literally disappearand it’s gonna give it a tiny bit oftexture so now I spiced up my ribs I’mgonna put them aside it’s a good thingto do to put them aside with the spicemixture for about let’s say an hour ortwo so just so the spices go through themeat in the meantime I’m gonna preparemy barbecue sauce base or marinade asyou would call it so first I’m going touse up all the ketchupand as you can see it’s quite a lot ofit I like to put a little bit more thanI actually for my recipe and just keepit in my refrigerator it’s a good thingto have especially if the sauce reducesdown a little bit too much you havesomething to refill besides you need tocover the ribs completely I will showthat in a second just chop some chiliesand the sriracha saucechef’s some garlic and the worthlesssaucechop some shallots pretty roughly addthe honey and stir it all through andthat’s pretty much it once you completedthat stage it’s time to rub thatmarinade in those ribs don’t be stingywith the sauce make sure they all reallynicely covered when you’re cooking yourribs or stewing your ribs in themarinade make sure on the first stage inthe oven they gobone up so what’s gonna happen now theribs are gonna go in the oven for atleast one hour I will cover them withsome aluminum foil for the first hourand the remaining half an hour we’regonna turn them upside down so meet upand then you’re gonna cook for anotherhalf an hour so this foil prevents thesauce from completely evaporating so Istill want all the sauce in the marinadeand all the juices from the meat insideand then for the last half an hour I’mjust gonna caramelize the top you justwant to be this really nice caramelizedtop on your list right so now it goes inthe oven so I’m gonna serve my ribstoday with some of course homemadebarbecue sauce but just for the balanceof it I’m gonna serve it also with someranch sauce and you can find thousandsof different recipes for the ranch saucetoday is my take on it so for my ranchrecipe I’m using buttermilk then someheavy 18% sour creamsome mayonnaise add it all in somechopped chives chopped dill parsley ofcourse roughly chopped garlic just makesure it’s really diced up boudoirsshallots get all that in of courseseason it up dash of lemon juice andjust stir it and when you make yourranch dressing it’s probably good tomake it one day ahead because when youput it in the fridge overnight it willset just a little bit so now it’s a bitrunny which is good for my recipebecause I want to spread it on my ribsbut generally if you let it sit for liketwo to four hours already in a fridge itwill get a little thicker so it will bea really nice dip okay so now let’s waitfor the ribs when the hours over justtake the ribs out make sure you take thefoil off turn the ribs and put them backin the oventhe oven should be at least hundredfifty degrees Celsius of course afterhundred seventy degrees they have toadjust the cooking time depending on howmuch meat you have on your ribs and youcook them for about one hourcovered and about half an hour uncoveredas I said you probably need to adjustyour recipe for your ribs all rightlet’s take those ribs out and now verycareful because it will be really niceand soft for them out on a tray it’ssome parchment paper now these should goin the oven but now just to keep themhot while we prepare all our ouringredients the ribs are still warmthey’re getting a little bit morecaramelized a little bit of crust on topin the meantime let me just drop thefries in and let’s prepare the sauce allright so let’s check the sauce I thinkit’s beautifulso my fries are almost done so let’stake the ribs out of the oven they’rereally nicely caramelized so let’s startbuilding a plate but first the pricemake sure they’re really golden shake itup get rid of all the excess oil in thebowl season and it go on the plate justlike that Fairmount ribs go on topthat’s a full slab they’re on our sideof the ranch sauce some homemadebarbecue up to the top and maybe just alittle bit salad more for garnish
