Spicy Thai Grilled Pork Salad Recipe: Moo Nam Tok – Nin is Cooking

Today I will cook ‘Moo Nam Tok’, a spicy grilled pork salad that comes from Esan. I will do it from scratch, including the roasted rice powder (key ingredient for many Esan food). This grilled pork salad is a fairly common Thai street food, but even in 5-star restaurants, you will find it. Thai people simply LOVE Moo Nam Tok.

For this Thai recipe, we will start with marinating the pork meat. To do so, I make a paste with Thai spices (that we pretty much use daily).

After that, I roast the jasmine rice with more herbs and then blend it to a powder.

Once the powder is ready, I prepare the herbs and vegetables to make the salad I will mix with the Thai grilled pork.

It’s then time to finally grill the pork! When it’s cooked, I slice it and extract meat juice from it to make the dressing.

That final step -my Thai spicy salad dressing- is made by mixing the meat juice with chili flakes and a few other ingredients.

● 400g Pork shoulder, steak cut
● 2 Tbsp Water
● 3 Garlic cloves
● 1 tsp Cilantro roots, chopped
● ΒΌ tsp White peppercorn
● 1 Tbsp Oyster sauce
● 1 Tbsp Soy sauce
● Β½ cup Cucumber, cut into bite-size
-Roasted rice powder-
● 5 Tbsp Jasmine raw rice
● 1 Tbsp Kaffir lime leaves, torn and cut
● 1 Tbsp Lemongrass, sliced
-Finely chopped-
● 2 Tbsp Spring onion
● 2 Tbsp Cilantro
