Watch me make Bún chả Hanoi style! Vietnamese Grilled pork and rice vermicelli noodles

In this video I am making another favorite dish of mine from Vietnam – Bún chả! It is from Hanoi, Vietnam. It consists of grilled pork (best grilled over charcoal) served in a broth with noodles and pickled vegetables and fresh herbs. It’s got several components but there’s so many ways you can eat it. One of things I love about Vietnamese food is how “communal” it can be – with everyone grabbing and tearing herbs, sharing a big bowl of noodles, passing around various sauces and condiments. All to create the perfect bite! It’s fun and delicious and very social. (It’s also fun and delicious to eat at home, by yourself, for you know – right now…) Below I will list the ingredients I use to make this. I have compiled this recipe from a cookbook I have and from my favorite YouTube Vietnamese food channel – Helen’s Recipes. I will link both of these below.

Ingredients:
1 lb Ground Pork
1 lb Pork Belly sliced
marinade:
2 tbsp minced garlic
4 tbsp minced shallot
2 tbsp oyster sauce
2 tbsp sugar
4 tbsp fish sauce
4 tbsp caramel sauce – Nước Màu (can buy in Asian market or watch Helen’s video to see how to make your own)
2 tsp “secret ingredient” – watch video to see
1 tsp fresh ground black pepper

Pickled Vegetables:
1 cup peeled sliced kohlrabi
1 cup peeled and sliced carrots
2 tsp salt
1 tbsp sugar
2 tbsp white vinegar

Also:
Rice vermicelli noodle – prepare as directed
chili-garlic sauce (shown in video, widely available)
fresh herbs – in this video I used mint, cilantro, bean sprouts and Rau kinh giới)
