Carrot “Pulled Pork” It’s Shredded Carrots in BBQ Sauce – similar to BBQ Pork. #bbq #pork #vegan

Hi and thank you so much for checking out my channel. In this video I’m showing how to make “Pulled Pork” made with shredded carrots. It’s very easy and you can make it even easier by using store-bought BBQ sauce instead homemade (recipe below). I guess the camera was not on when I made the sauce but I’m leaving the full recipe and directions here. If you’d like to see a video of the sauce, please just let me know! I’d be happy to make it if you’d like to see it. I just love this recipe. It is such a great idea for making “mock” BBQ’d pork.

5 large carrots, shredded
1 medium onion, thinly sliced
1-2 teaspoons olive oil
1/2-1 teaspoon salt
1/2-1 teaspoon ground black pepper

BBQ Sauce
1 8 ounce can tomato sauce (or 1 cup ketchup)
4 cloves garlic, minced or grated
1 teaspoon olive oil
1/4 cup apple cider vinegar
1 tablespoon maple syrup (or honey or molasses)
1/2 cup packed brown sugar
1 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper (or chili powder )
1 tablespoon lemon juice
1 chipotle pepper in adobo sauce, chopped

Preheat oven to 375 degrees F. Line baking sheet with parchment or silicone mat – or spray with non-stick spray. Mix the carrots and onion along with olive oil, salt and pepper. Spread evenly on pan. Cover pan with foil and roast in preheated oven for 20-25 minutes.

Remove foil, stir and place back in the oven to roast or 10-15 minutes more. Vegetables will be slightly caramelized.

While carrots are roasting, place all BBQ ingredients into blender or food processor. Blend until mostly smooth, about 20 – 30 seconds. Pour into medium saucepan and bring to boil over medium heat, stirring occasionally. Reduce to simmer. Stir occasionally for about 15-20 minutes. When carrots are out of the oven, add them to the BBQ sauce and allow to simmer on medium low for 15 minutes.

Serve on hamburger bun or sliced bread with pickles or cole slaw, as you would with pulled pork.
