Grilled BBQ Chicken with Alabama White Sauce | Weber Smokey Mountain Recipe | Cooking Up Love

Our Grilled BBQ Chicken cooks hot and fast on a high heat charcoal grill, so the meat is incredibly juicy, tender and super flavorful. We serve it up with homemade Alabama White Sauce, and this is one barbecue chicken recipe you’ll be dreaming about because it’s that good!

Grilled BBQ Chicken Ingredients
2 whole chickens
Barbecue Chicken Rub (recipe below)
favorite BBQ sauce (I’m using Sweet Baby Rays)
Alabama White Sauce (recipe below)

Grilled BBQ Chicken Rub
1/4 cup brown sugar
2 teaspoons kosher salt
2 teaspoons garlic salt
1 teaspoon garlic powder
2 teaspoons black pepper
2 teaspoons smoked paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon cayenne pepper

Grilled BBQ Chicken Directions
First, take the chickens out of the refrigerator to bring to room temperature.

Next, mix up the BBQ Chicken Spice Rub. Combine all ingredients and mix well.

To prep the chickens, split them in half. Remove any innards that have been packaged inside and pat the chickens dry. Using kitchen shears or a sharp knife, remove the backbone. Then flip the bird over and cut down the breastbone. You can keep the backbones to use for stock or discard them.

Take the rub and generously season both sides of the chicken halves. My chickens were a bit large, so I mixed up another 1/2 recipe of the BBQ Chicken Spice Rub to make sure each piece had a nice coating on the front and back sides.

See the notes below for prepping your WSM if you’re using this as a Weber Smokey Mountain recipe. Grill the chicken over a high heat grill, about 350 to 375 degrees. Oil the grill rack, and place the chicken, skin side down on the rack. Cover and cook for about 30 minutes, watching for flare ups. Rotate the grill rack to avoid hot spots that may pop up from the chicken drippings. Time and temperature will vary based on your grill, the outside temperature, etc.

After 30 minutes, turn the barbecue chicken over so the skin side is up. I’ve put a temperature gauge in the thickest part of the breast to keep an eye on the temperature. Cover and cook until it’s about 145, then baste with your favorite bbq sauce. Cook for another 10 – 15 minutes until the chicken reaches about 160 – 165 in the thickest part of the breast or thigh. Remove from heat, cover with foil and let rest for about 5 – 10 minutes.

Serve this delicious barbecue chicken with Alabama White Sauce, your favorite bbq sauce and a bunch of classic bbq sides.

Alabama White Sauce Recipe

While the chicken is cooking, whip up this super tasty Alabama White sauce to serve with the grilled bbq chicken.

Alabama White Sauce Recipe
1/4 cup white vinegar
1 cup mayonnaise
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
2 teaspoons creamy horseradish
1 tablespoon spicy mustard

Mix all together until well blended and put into the refrigerator to chill. For a sweeter Alabama White Sauce, add about a tablespoon of brown sugar. Use Alabama White Sauce to baste grilled bbq chicken, or serve it on the side for dipping.

How to Make Grilled BBQ Chicken on the Grill

Weber Smokey Mountain Recipe for Hot and Fast cooking
This is a Weber Smokey Mountain recipe where we take out the water pan, open up all the intake vents and brink the WSM up to a temperature of 350 to 375. I fill the bottom of the WSM with charcoal, add the hot coals from one chimney starter, and add in a couple chunks of wood. I’m using 2 chunks of hickory and one apple. If you have trouble getting the WSM hot enough, try taking off or opening the door to let more air flow in. Cooking Grilled BBQ Chicken on Charcoal Grill or Gas Grill
You can also use a charcoal grill or a gas grill for this bbq chicken recipe, just bring the temperature up to the high temperature and watch for flame-ups.
