8 chicken leg quarters bone-in, skin on
2 cups of TricNic Jerk BBQ Sauce
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon chicken seasoning
1 tablespoon garlic oil or olive oil
Preheat oven to 375 degrees F.
Coat the chicken on all sides with garlic oil and season with salt, black pepper and chicken seasoning or you can use your favorite spice rub.
Cover and refrigerate overnight. Bring chicken to room temperature before proceeding.
Spray baking tray with cooking spray.
Place the chicken skin side up on a rimmed baking sheet. Bake for 40 minutes.
Remove chicken from oven, pour the juices off and turn the chicken over.
Coat the chicken with TricNic jerk barbecue sauce using a basting brush. Use a tong to flip the chicken over. Baste the other side of the chicken, and place back in the oven for 10 minutes.
Remove from oven, baste more TricNic Jerk barbecue sauce on top only. (skin side)
Move the oven rack up and broil the chicken for 3-4 minutes, until it’s crispy. Keep your eyes on them you don’t want them to burn.
