How to make BBQ PORK & APPLE MEATLOAVES with Garlic Mashed Potatoes & Roasted Green Beans

Ingredients
2 PERSON | 4 PERSON
Panko Breadcrumbs 1/4 CUP -1/2 CUP
Fry Seasoning 1TBSP – 2TBSP
Yukon Gold Potatoes 12oz – 24oz
Ancho Chili Powder 1tsp -1tsp
Sour Cream 2 TBSP – 4TBSP
Classic BBQ Sauce 4TBSP – 8TBSP
Apple 1 – 1
Ground Pork 10oz -20oz
Ground Beef 10oz -20oz
Green Beans 6oz – 12oz
Garlic 2 cloves – 4 cloves

Directions:
Preheat oven to 450 degrees. Wash
and dry all produce.
• Halve and core apple; grate half the
apple on the largest holes of a box
grater. Add to a medium bowl and mix
with panko.
• 4 SERVINGS: Grate whole apple.
• TIP: Squeeze out any excess moisture
from grated apple before adding it to
panko.

Dice potatoes into ½-inch pieces.
Place in a medium pot with half the
garlic cloves and enough salted water
to cover by 2 inches. Bring to a boil and
cook until tender, 15-20 minutes.
• Reserve ½ cup potato cooking liquid,
then drain and return potatoes and
garlic to pot. Cover to keep warm.
• Meanwhile, grate or mince remaining
garlic.
• 4 SERVINGS: Add 2 cloves garlic to pot
with potatoes.

Add pork*, ¼ tsp chili powder (you’ll use
more later), grated garlic, and Fry
Seasoning to bowl with panko mixture.
Season generously with salt and pepper.
Form into two 1-inch-tall loaves.
• Place on one side of a baking sheet.
Bake on middle rack for 10 minutes
(you’ll add more to the sheet then).
• 4 SERVINGS: Use ½ tsp chili powder.
Form pork mixture into four 1-inch-tall
loaves. Spread out across entire sheet.
• TIP: Line sheet with parchment or foil
before adding meatloaves for easier
cleanup.

While meatloaves roast, toss green beans
in a second medium bowl with a large
drizzle of olive oil, salt, and pepper.
• Once meatloaves have baked 10
minutes, remove sheet from oven. Add
green beans to empty side. Roast until
meatloaves are cooked through and
green beans are tender, 12-15 minutes
more.
• 4 SERVINGS: Leave meatloaves
roasting and add green beans to a
second sheet; roast on top rack.

Meanwhile, in a small bowl, combine
BBQ sauce and ½ tsp chili powder
(use the rest as you like). Season with
salt and pepper.
• Mash potatoes with sour cream and 2
TBSP butter, adding splashes of reserved
potato cooking liquid as needed until
smooth. Season with salt and pepper
to taste. Cover to keep warm.
• 4 SERVINGS: Use 4 TBSP butter.

• In the last 2-3 minutes of cooking,
spoon or brush tops of meatloaves
with BBQ sauce mixture. Return to
oven until glaze is slightly sticky and
meatloaves are cooked though.
• Divide meatloaves, potatoes, and
green beans between plates and serve

hey welcome and thank you for tuning into another episode of cooking at homewith Chef Jeff and tonight we’re gonnabe making a barbecue pork and applemeatloaveswith garlic mashed potatoes and greenbeans so if you are interested in seeinghow we prepare probably one of the bestmeat loaves I’ve ever tried then come onlet’s get going all right for thisrecipe it’s pretty simple as far as whatthe ingredients are calling for we’regonna gonna have an apple we’re gonnastart with the apple and we want to cutit in half and then we’re going to pourit great half of the Apple using the thebigger holes on top of here or inwhether you have a grater like this or abox grater and once we’re complete withthis we’re going to then try to squeezeas much of the water out of this aspossible and then once we’ve done thatwe’re gonna then go ahead and mix thisin a small hole with the pankobreadcrumbsactually I think I said we’re gonnasqueeze the water out of this what Imeant to say is we’re gonna squeeze thejuice of this Apple now one way to getthe juice out of the Apple is you couldput this in a dish towel or a papertowel paper towel may rip but if you’recareful enough you can make it work andthen you can hold this over the sink andsqueeze out the juice alright now thatwe have that sliced up or diced upshreddedwe’re going to add it toOh breadcrumbs for the next step youwant to take the potatoes you want tocut these up into about half inch cubesonce this is complete you want to takethis you want to add them to a mediumpot full of water and just enough saltand you want to bring that to a boilabout 15 to 20 minutes until thepotatoes become tender so we’re gonnabring that to a boil and we’re alsogoing to add in two gloves with twocloves of garlic and like I said that’llcook for about fifteen to twenty minutesso while we’re waiting for the potatoesto boil one thing you could do is youcould start to mince or grate the restof your your garlic cloves well if theydon’t want to show you and I love littlegadgets and this is I’m sure you couldjust buy a little piece of rubber but Iremember one Christmas I think this wasa stocking stuffer from my father andit’s basically takes the skin off of thegarlic so all you do is you put thegarlic in the tube you roll it and theskin is off just like that I don’t knowabout you but when you don’t have thesethings it can be a real pain sometimesto get that skin off but this is justthe thin two seconds or lessperfect piece of garlic ready to be usedall right so the recipe calls for porkI’m adding a beef and pork together wejust really tend to like it betterbetter this way whatever reason I don’tknow but we’re gonna mix that togetherthat’s the great thing about cooking youknow you could alter the recipehow do you like whatever suits yourneeds and tastes and and wants anddesires we’re gonna then add the gratedor the minced garlic add the breadcrumbsand along with chili pepper fryseasoning which is paprika garlic andonion powder all mixed together we’regonna add all that in there and thenwe’re gonna dip I’m going to season itgenerously with salt and pepper that’scomplete we’re gonna go ahead and mixthis all up and we’re going to form thisinto about 4 1 inch tall pennies or lowsI should say the Apple is the not sosecret ingredient but what it does itactually makes it extra moist andactually makes the meatloaf a little bitsweeter it’s already made two of theloaves and we’ll go ahead and make thelast two now if those are complete we’regonna then take those and we’re gonnacook these for 10 minutes on the middlerack alright now that the meatloaf iscookie or a while the meatloaf iscooking we’re gonna take the green beanswe’re gonna add some a drizzle of oilwe’re gonna season them with salt andpepper to the meat pan and it will cookfor another 10 to 15 minutes along withthe meatloaf also in the meatloaf juicemmmit’s been 10 minutes for the meat loavesto be cooking and how did the greenbeans and they’ll cook right alongsidewith that for another 12 to 15minutes and the element is on 450 soit’s got some pretty good heat we’ll seeyou in 12 minutesall right now that the beans and themedia are cooking we’re gonna in anothersmall bowl we’re going to take and addfour tablespoons of sour cream to threeand four but then we’re going to seasonit with salt and pepper going to add therest of the chili powder and we’re goingto add classic barbecue sauce to themixture then go ahead and mix that upand then we’re going to set that asideand then we’re going to head on over tothe potatoes because they just aboutfinished cooking and then I’m go aheadand smash those up potatoes ready beforewe strain the water it’s reallyimportant to to take some of the atleast a half a cup of the reserve andset that aside because you’re going toadd that to the potatoes to make themmore moist in case it gets it appears tobe dried up drying out so we’re going tostrain the potatoes once that’s donewe’ll pour them back in here we’re goingto add two tablespoons of butter addfour tablespoons of sour cream this isthe serving size for four people ifyou’re only serving two people you onlywant two tablespoons now we’re gonna getthe potato masherthis is the fun part get that mash thesepotatoes and you can match them towhatever chunkiness you would likeobviously the more mashing the smootherit gets and if you feel that you need toadd some potato reserve go ahead and doso right now actually it’s lookingpretty good all right so when you haveabout three minutes left on the meat youwant to then take the barbecue mixtureand you want to coat the top of eachloaf and then we’ll put that back in tocook for about another three minutesuntil about the the glaze becomes alittle sticky this is smelling reallygood by the wayI wish you were here to experience itmaybe maybe you can invite me over toyour place and I’ll I’ll cook dinner foryou and your family who knows that’scomplete with that in for another threeminutes all right just putting thefinishing touches on this and here we gowe have barbecued pork topping meatloaf
