How To Make JAMAICAN CRISPY FRIED BBQ CHICKEN.

INGREDIENTS:

Season Flour
2 cups of all purpose flour
2 tablespoon chicken seasoning
1 tablespoon paprika
1 tablespoon black pepper

Batter Mixture
1 1/2 cups of flour
1 tablespoon of baking powder
2 cups of carbonated water
2 eggs

Sauce
1 1/2 cups of TricNic Jerk BBQ Sauce
2 tablespoons of molasses

Chicken
4 leg quarters cut into 8 pieces
2 tablespoons of chicken seasoning
1/2 tablespoon of black pepper
1 teaspoon of sea salt
1/2 teaspoon of garlic oil or powder
1/2 tablespoon of black pepper
1 teaspoon of paprika

METHOD:

1. In a large bowl add flour, chicken seasoning, black pepper & paprika.

2. Mix well together until all combined. Set aside.

3. In a large bowl add flour, baking powder & carbonated water. Use a whisk to wipe together until combine, now add eggs wipe again until smooth.

4. Cut each leg quarter into two, you should get 8 pieces.

5. Add chicken in a large bowl with cold water & lime, rinse chicken well, use a large strainer to drain off water from chicken.

6. Add chicken to a clean large bowl, now add all ingredients listed, chicken seasoning, black pepper, salt, paprika and garlic oil or powder, now rub in the seasoning well until the chicken is well seasoned.

FRYING METHOD:

Deep fryer
Oil (full to max)

1. Set temperature to 350 degrees F.

2. Place chicken in batter, shake off any excess of batter. Now add chicken to flour coat evenly and make sure to shake off any excess of flour. Repeat the process until all the chicken are breaded. Set them on a drip rack with a tray under the bottom.

3. Now add the chicken one by one in the fryer basket. Slowly pulling the basket down into the oil, let them fry for 2 minutes before cover.

4. Check them and give the basket a shake, cover with lid and continue fry for 10 more minutes or until temperature reaches 165 degrees F

5. Remove Chicken from fryer and set them on a drip rack with a tray under the bottom.

6. Pour the sauce in a bowl along with molasses and mix well. Now add chicken one by one and coat evenly, shake off the excess of sauce, set chicken on a drip rack with a tray under the bottom.

7. Place chicken in prepared oven at 350 degrees F on the middle rack for 10.
