Pork Ribs on the Big Green Egg w/ Coffee BBQ Sauce | Vanilla Cherry Trifle

In this video we learn how to smoke pork ribs using the XL Big Green Egg ceramic cooker. Start the fire with charcoal and apple wood chunks for full flavour and get it settled at 225F. We use a 3-3 smoking method meaning the ribs cook uncovered for 3 hours and then cook wrapped in foil for the last 3 hours. This ensures they will be falling off the bone tender but ALSO moist inside. Our rub is 50/50 salt & pepper and equal parts paprika, garlic, coriander. Spritz the ribs every 30 mins with apple juice/ACV blend.

Paired with the ribs is a Coffee BBQ Sauce inspired by Franklin BBQ. Sides are Chili Garlic Grilled Broccoli and 3 Cheese Baked Mac.

The Berry Trifle in a jar consists of the hot milk sponge cake, vanilla custard, vanilla whipped cream, kirsch soaked dark cherries, and toasted almonds for crunch.
