Potato Pancake with Cheese Filling and Barbecue Sauce

My kids always love anything made from potatoes and cheese. This meal makes your kid’s happy. Easy to make, affordable and so yummy!!!

Ingredients:
Mashed Potatoes (full recipe below)
Cheese slices (Cheddar or mozzarella)
½ cup flour
2 eggs
½ cup panko bread crumb

Potato pancake with cheese filling

Total: 45 minutes
Prep: 15 minutes
Cook time: 30 minutes
Yield: 4 servings

Ingredients:
Mashed Potatoes (full recipe below)
Cheese slices (Cheddar or mozzarella)
½ cup flour
2 eggs
½ cup panko bread crumbs
Salt and pepper

Procedure:
-Put the mashed potato into any mould and form them into patties
-Put cheese filling in every potato patty
-You may keep this in a refrigerator
-Coat it with a flour
-Dip into beaten eggs
-Coat with panko bread crumbs
– You may be pan-fried or deep-fried, for 5 minutes per side or until golden brown

Serve immediately

Storage: Refrigerator 3 days in an airtight food storage container.

Mashed Potatoes

Ingredients:
1 kg medium (russet) potatoes, peeled, cut into quarters
Salt and dash pepper
¼ cup melted butter, if desired
¼ cup all-purpose cream

Procedure:
-Peel the potatoes and cut into quarters
-Place potatoes in a large casserole of boiling water
-Make sure you have enough water to cover the potatoes
-Reduce heat to medium-low
-Cover loosely and boil for 15 to 20 minutes or until potatoes break apart easily when pierced with a fork
-Drain well
-Mash potatoes with a fork or potato masher until no lumps remain
-Melt the butter in a pan
-Add butter
-Add Salt and pepper
-Add all-purpose cream
-Make potatoes smooth and creamy
-Set aside

Barbecue Sauce

1 tablespoon cooking oil
2 clove garlic, minced
1 medium onion, minced
1 tablespoon sugar
½ – 1 cup of tomato or banana ketchup
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1 teaspoon vinegar
Salt and white pepper
Spanish paprika
Cayenne pepper
¼ cup water add gradually

Procedure:

– Preheat the pan, pour the cooking oil
– Saute onion and garlic
– Add sugar
– Add ketchup
– Add water gradually
– Put the soy sauce and Worcestershire sauce
– Add salt, white pepper, Spanish paprika and cayenne pepper
– Add the vinegar, don’t mix let it simmer for a minute or until you smell the vinegar
– You may strain the aromatics if you like
– You can use this as a dip or top it over to your potato pancake or any dish
