Pulled Pork with White BBQ Sauce
1 ½ lbs. pulled pork, trimmed and cut into 2 inch cubes
½ cup apple cider vinegar
¼ cup water
3 Tablespoons brown sugar
2 teaspoons salt
¾ teaspoon black pepper
½ teaspoon cayenne
½ teaspoon chili powder
¼ teaspoon garlic powder
In a medium saucepan, combine vinegar through garlic powder, stir. Bring to a boil. Add pork to the pan. Cover, reduce heat and simmer for 1 hour. Remove pork from cooking liquid, reserve. Shred meat with two forks. Place meat in a serving bowl and pour cooking liquid over.
White BBQ sauce
Whisk together ½ cup reduced fat mayonnaise with 2 Tablespoons white vinegar, 1 teaspoon coarse black pepper and 1 teaspoon lemon juice. Serve with pulled pork.
