[Music]hey guys welcome back to my channel nowI know what you’re thinking stuff Ithought you did vegan recipes why areyou showing us these barbecued pulledpork tacoslet me just blow your mind right now andtell you that these tacos are not porkbut our roasted BBQ jackfruit tacos whatbut in all honesty I’m sure many of youhave already heard of jackfruit or maybeI’ve already tried jackfruit but Iwanted to share a version with you thatuses a homemade sugar-free keto BBQsauce as well as show you how to preparethe jackfruit ok guys so here we go forthis recipe I’m going to make my ownketo BBQ sauce that’s vegan for thejackfruitand I’m going to make a quick and easyfresh pico de galloinstead of using store-bought I startedby gathering my ingredients and settingthose close by but first I wanted toprepare the jackfruit the jackfruit thatI’m using I got at a corner store and itcomes in a can and when I opened it upand drained it the jackfruit came out inchunks in order to get the texture ofpulled-pork so kind of like you knowshredded I just took a piece out andsort of crushed it gently with myfingers there’s a few seeds and hardparts that you want to pop out and asyou’re crushing the jackfruit with yourfingers to break it up the seeds justkind of easily slip out I have to saythough that this fruit is so super weirdbecause it really does look likeshredded meat the good part though isthat it has a really pleasant sweetsmell so it sort of plays tricks with myhead a little bit and it kept me fromfeeling like I was dealing with realwork anyway it took a little bit of timebut eventually I broke up and deseededtwo cans of jackfruit and then dump theseeds in started on the keto sugar freebarbecue sauce this barbecue sauce was alittle bit challenging because Irealized as I was filming that I wasmissing a main ingredient which wasliquid smoke but I did improvise and inthe end it did turn out pretty dang goodso boom here we go to make this veganketo barbecue sauce I started with a canof tomato paste and added the wholething into my bowl then I used the keyto measure some water to thin it outbecause tomato paste is very very thickI added in one can of water then half acan of apple cider vinegar then I addedin a little over a tablespoon of liquidsoy aminos and then about twotablespoons or so of vegan versus suresauce now be aware that we’re sistersauce is not normally vegan because itdoes have anchovies in it typically butthis brand is vegan and as far as I canremember so is the Annie’s brand anywayin that went and I was dipped togetheruntil it was all blended the consistencylooked pretty good so next I added in myzero calorie sweetener which I usedgolden monk fruit sweetener and this isto replace the honey and brown sugarthat normally goes in barbecue sauces tosweeten up the sauceand I find that I like monk fruitsweetener much more than stevia I used alittle over 1/4 of a cup of thesweetener and then came the spices andseasoningsnow I season this thing up to taste andhonestly I rarely measure when I cookwhich is I know not the best way todemonstrate how to make something for atutorial but I watched this footage andfigured out how much of everything I useand I will be putting the spicemeasurements up right here on the sideand also they will be down below in thedescription box next to give this just alittle bit more flavor I added somechopped fresh garlic and I put thatdirectly into the jackfruitI didn’t want to add raw garlic to thebarbecue sauce because I made a lot ofit and I wanted to reserve some of itand just thought that if I wanted to dipthings in the barbecue I didn’t want tochomp down on a like big raw piece ofgarlic you know so in went the choppedgarlic into the jackfruit along with adrizzle of my barbecue sauce and then Ijust tossed that around until thejackfruit was evenly coatednext I dumped out the dress Jack threwonto a baking sheet lined with parchmentpaper and yes parchment paper is prettyimportant because it keeps it fromsticking to the sheet and then I wentahead and spread that out okay soremember how I mentioned I had forgottento grab the liquid smoke which is superimportant for getting the smoky flavorand aroma that barbecue sauces have wellI improvise by grabbing a spice that Idid have on hand thatblend a smoky aspect this spice issmoked paprika I dusted the jackfruitwith the smoked paprika and then used anempty pickle jar I had saved earlier toreserve the rest of the BBQ sauce to beused at another time alright so I poppeda jackfruit into a preheated oven set on375 degrees and then I grabbed theingredients to make my simple fresh picode gallo salsa that will go great withthese tacos for this I minced up twolarge cloves of garlic and then addedthem into a mixing bowl then I choppedup some red onion about half a cup andoh my god onions kill me like somepeople don’t get teared up when theyslice up onions but I do so so bad justtrying to get through this was hard andmy eyes started watering up so bad Ithought my makeup was gonna come runningdown my face before I shot this video ifanyone has any good tricks for helpingthis please let me know ok so next Idiced up 2 big juicy tomatoes and addedthat in there along with one fulljalapeno with the seeds removed Ipersonally do like really spicy salsasbut I was actually cooking this up formyself and another person and he’s alittle bit more sensitive displaces thanI am so I didn’t want to like melt hisface off with the seeds but if you wantyou can leave those in finally I juicedone big lime over the top and added insome salt to taste and here’s aninteresting fact about cilantro did youguys know that some people have amutation in their saliva that makescilantro tastes like soap to them well Isure don’t have it because I freakinglove cilantro but the person who I wasalso cooking for yep you guessed it hehas that quality so I reserved 1/2 thepico de gallo on the side in an emptyjar for him and then I went in ahead andchopped up a bunch of fresh cilantro andadded that in for me solutions boomkeeping people together after about 20minutes it was time to pull my chocfruit from the oven and holy guacamolelook at thatwhen tossed with the sauce and baked itlooked crazy much like pulled pork itactually stunned me a little bit it’salso great that when it’s baked in theoven the edges get a little bit charredand just get a little bit more flavorit’s just so good time to load up thetacos onto some soft corn tortillas orreally any that you would like I alsotried these later on on someromaine lettuce leaves to make thiscompletely Kido and that was also reallygoodthen I added in some fresh avocadobecause I’m Californian as F and we addavocado to just about everything andthen just a few red onions and cilantroover the top which made these kind oflike Mexican Street style tacos okayguys that does it for this video I hopeyou give these a go and let me know howyou liked them
