Boxing Day BBQ Turkey Crown

Boxing Day was Gill’s turn to cook and her choice was a turkey crown, which we cooked on the Big Joe 3 over cherry wood for added flavour. The crown was 2.3 kilos and was cooked at 140ºC unit it reached an internal temperature of 72ºC in the thickest part of the breast. The bird was rested for about twenty minutes before carving.
