Homemade Asian Meatballs – Chicken Noodle Soup (Pho) & Grilled Beef Meatballs

These meatballs are ones of the popular street food in Asia especially Thailand. These meatballs can be made with pork, fish and shrimp and squid too. They are great for grilling and making noodle soup such as Pho. They can be kept in the freezer for months.
Ingredients
1/2 pound lean beef, any cut will work, trim out all of the fat. (or pork, chicken, fish & shrimp.)
1 egg white
2 ts tapioca flour or cornstarch
1/2 to 1 ts salt
1/2 to 1 ts sugar
1/2 to 1 ts black or white pepper
1/2 to 1 ts garlic powder
1/2 to 1 ts soy sauce, optional
1/2 ts baking powder
1/4 cup ice water, more or less as needed
Method
1. Cut the beef into thin slices. Then process it in the food processor until smooth.
2. Add all of the seasonings and process again while adding ice water a little bit at a time until becoming a paste.
3. Place the beef mixture in the freezer cover with plastic wrap for 1 hour.
4. In a medium pot over high heat, bring about 6-8 cups of water to a boil. Then turn the heat down to low and the water stop boiling.
5. Bring the beef mixture out of the freezer and process it one more time until smooth, add more ice water if needed.
6. Place the beef paste into a zip lock bag. Cut a hole at one corner big or small depending on the size of the meatballs you are making.
7. Squeeze the beef paste out into a ball and use a wet spoon to take it out and drop it into the hot water. Repeat the process for the rest of the beef paste.
8. The meatballs will float when cooked, stir occasionally and let simmer (without the water come to a full boil) for at least 20 minutes more to make sure that the meatballs are cooked through.
9. Transfer the meatballs into a bowl with ice water in it. Let cool completely in the ice water.
10. Use the meatballs for making soup, stir fry, or curry as desired. These meatballs freeze well.
